    After buying shrimp, use a knife to cut off the head, peel the shell, clean the black vein on the back, and keep the shrimp tail.

    Then, wash the shrimp with diluted salt water and rinse with clean water several times and let it drain.

  • Mixing the batter

    First, add 100g crispy flour into a bowl, then crack an egg into it and add 70ml of water, using a chopsticks to mix well.

    After that, season with 1/2 spoon of monosodium glutamate, 1/2 spoon of seasoning powder, and 1/2 spoon of ground pepper, and continue to stir until the batter is smooth, not too thick and not too thin.

  • Coating with flour

    You dip the shrimp that has been prepped in the mixture of flour for frying, then roll it in the layer of panko breadcrumbs and place the shrimp on a plate.

    Repeat similar steps until all the shrimp are coated.

  • Fry the shrimp

    Place a pan on the stove, add 400ml of cooking oil and heat until the oil is hot, then add the shrimp to fry over medium heat.

    After about 2 – 3 minutes, when the shrimp starts to firm up, turn the shrimp to ensure they are golden on both sides, then remove them to a plate lined with paper towels.

    Tip: When you first add the shrimp to fry, do not rush to stir them, as this will cause the coating to fall off.

How to Prepare Fried Shrimp with Shell

  • Prepare and Marinate Shrimp

    After buying the shrimp, wash them thoroughly, then peel the shell of the shrimp’s body, leaving the shell at the head and tail for a better appearance when frying.

    To remove the roe from the shrimp, cut in the middle of the joint between the head and the body, then pull out the black thread from the shrimp’s body.

    After preparation, add 1 spoon of seasoning, 1 spoon of monosodium glutamate, and a little ground pepper to the shrimp and mix well to let the shrimp absorb the flavors.

    Then add the egg yolk and mix well.

  • Mixing the batter

    You add 35g of tapioca flour, 3 teaspoons of fat powder, 3 teaspoons of lion powder, 3 teaspoons of corn flour, and 1 tablespoon of crispy frying flour into a bowl and mix well.

    Continue adding water to the flour and stir well until the batter can just flow down. Do not add too much water, as it will thin the batter and the shrimp will not stick.

    After mixing the batter, add it to the marinated shrimp and mix so that the batter evenly coats the shrimp.

    To dip shrimp in batter, use two gloves: one hand to take the shrimp and mix it with the batter, and the other hand to coat it with breadcrumbs.

    Take the shrimp out of the wet batter, place it into the breadcrumbs, and remember to use the breadcrumbs to coat the shrimp so that the breadcrumbs stick to the shrimp and dry before taking it out!

    After coating with breadcrumbs, place the shrimp into a pan of hot oil over low heat. After adding all the shrimp, turn the heat to medium.

    Fry the shrimp in oil over medium heat until the breadcrumbs harden, then turn the shrimp to ensure they are evenly golden. Once the shrimp are uniformly golden brown, they are cooked, and you can remove them using a sieve to drain the oil, and you’re done.
