How to make Fried Pork Sausage with Fish Sauce

Prepare the ingredients
First, we peel the garlic and mince it together with the chili to make the sauce.
Cut the sausage into round slices about the thickness of one finger, each slice should be cut into 4 pieces.
Tip: We can cut the sausage according to our preference; however, it should not be cut too small to avoid burning and soaking too much sauce, which makes the sausage salty. -
Make the sauce
First, add 3 tablespoons of fish sauce into a bowl, followed by 2 tablespoons of chili sauce, 2 tablespoons of sugar, and 1/2 teaspoon of monosodium glutamate. Then use a spoon to stir the mixture until combined.
Note: Depending on your taste, you can adjust the amount of seasoning to your liking, but be careful not to add too much sugar as it can cause the sausage to burn while frying with the sauce.Next, add all the chopped chili and half of the minced garlic into the sauce and mix well.

Pre-fry the pork sausage
Place a pan on the stove and turn on medium heat, add 200ml of cooking oil (enough to cover the surface of the sausage), wait for the oil to heat up and then gradually add the pork sausage to fry.
Fry until both sides are golden, then transfer the fried sausage to a plate.

Fry the pork sausage with fish sauce
Pour some oil out of the pan, leaving a small amount (about 1 tablespoon) to fry the pork sausage with the sauce.
Turn on medium heat, wait for the oil in the pan to heat up, then add half of the remaining minced garlic to the pan and stir until the garlic turns golden, then add the sauce.
We stir gently until the mixture boils, then add all the fried pork sausage.

Prepare the Ingredients
Cut the pork roll into round slices and then continue to cut into long rectangular pieces that are not too thin, about 1/2 finger thick.
Proceed to mince the garlic and shallots, wash and chop the green onions.
After peeling and washing the carrot, cut it into long and moderately thin pieces.

Fry the pork sausage

Stir-fry vegetables
Pour out some of the cooking oil from the pan, just leave about 2 tablespoons of oil to stir-fry the vegetables, turn on medium heat and wait for the oil to heat up, then add minced garlic and sauté until fragrant, then add shallots and stir well.
When the garlic and shallots are evenly golden, add all the carrots and stir-fry continuously, after about 3 minutes, add the onions and stir-fry together for another 3 minutes.
Tip:- Remember to sauté the garlic first, when it becomes fragrant, add the shallots, do not add both at the same time because the shallots will cook faster than the garlic, which may cause the shallots to burn or the garlic to not cook at the same time as the shallots.
- Note to add the carrots first, as they take longer to cook than the onions. During the stir-frying process, do not use too high a heat and do not cook until overly soft!

Fry the pork sausage in spicy sauce
After stir-frying the onion and carrot, add all the fried pork sausage, keep the stove on medium heat, and gradually add chili powder, seasoning, pepper, sweet and sour chili sauce, and 4 – 6 tablespoons of water into the pan, stirring well over medium heat.
Stir constantly until the sauce in the pan thickens and evenly absorbs into the sausage. When the mixture turns a beautiful yellow as shown in the picture, add all the green onions and stir a few more times before turning off the heat.
