Blend Almonds
You fill a bowl containing sliced almonds with water and soak for about 1 hour.
After that, you take the almonds and put them in a blender, adding 200ml of clean water, then press the button to blend until smooth.
Finally, strain the blended mixture through a sieve lined with a cloth to obtain smooth almond milk, avoiding any residue.

Soak Gelatin
You add 3g of gelatin (which can be cut into strands) to a bowl containing 200ml of water, and soak until it expands and softens.

Heat Milk Mixture
Place a pot on the stove, turn the heat to low, and add all the gelatin from the bowl into the pot, stirring well with 1 teaspoon of rock sugar.
After the rock sugar dissolves, add 200ml of whole milk along with the filtered almond milk. Stir until the milk mixture heats up (but does not boil), then turn off the heat.
Finally, strain through a cloth filter and pour the milk mixture into a mold to let it set into tofu.
Tip: Allow the tofu mold to cool in a well-ventilated place until it sets, about 3 – 4 hours. -
Completion
Take the tofu out of the mold, and cut it into bite-sized squares.

How to make Chickpea Tofu

Soak the chickpeas
Soak the chickpeas in a large bowl full of water, leave overnight.

Blend the chickpeas
You take the chickpeas and put them in the blender, then add 500ml of water, press the button to start blending until smooth.
Then, you pour the mixture into a strainer and pour the remaining 100ml of water into the blender to rinse off the leftover chickpeas.
Squeeze the blended chickpea mixture well to extract the juice.

Boil the mixture
Place a pot on the stove, turn the heat to low and add the freshly squeezed chickpea juice into the pot. Stir continuously and cook until the mixture thickens slightly and starts to boil, then turn off the heat.
