Sugar 140 gr Water 40 ml Lemon juice 1 tablespoon Vanilla 1 tablespoon Fresh milk 400 ml Coconut milk 100 ml Condensed milk 150 ml Fruits 100 gr (banana/dragon fruit/papaya/mango/kiwi) Egg yolks 5 pieces Egg whites 3 pieces

How to make Fruit Caramel Pudding

  • Prepare the fruits

    Wash the fruits thoroughly after buying them, then cut them into bite-sized pieces.

    Step 1 Prepare the fruits for Fruit Caramel Pudding
  • Coconut Flan Cake

    Put 70g of sugar, 40 ml of water, and 1 tablespoon of lemon juice into a pot and boil until it turns dark yellow. Then, pour the mixture into bowls (about 1 tablespoon of mixture per bowl).

    Add 5 egg yolks, 3 egg whites, 70g of sugar, and 1 tablespoon of vanilla into a bowl and use a whisk to mix the ingredients well.

    Heat the mixture of 400ml fresh milk, 100ml coconut milk, and 150ml condensed milk to about 50 degrees Celsius (stirring continuously while heating).

    Mix the milk mixture and the egg mixture together, then strain the mixture through a sieve.

    Pour the mixture into the prepared bowls and steam for 20 – 25 minutes. Then remove the cake and let it cool.

    Use a knife to remove the cake onto a plate. Decorate with fruits and fresh milk around it. And there you have it, a delicious, refreshing fruit caramel dessert.

    Wash the aloe vera, peel off the skin, and cut it into bite-sized pieces.

    Add 100g of sugar, 2 teaspoons of jelly, and 2 teaspoons of agar powder into 1 liter of water and stir well. Then, add the mixture along with a bunch of pandan leaves and a few drops of vanilla into a pot and boil for about 20 minutes (skimming off the foam).

    Put the cut fruits into the mold, then pour the boiled jelly mixture into the mold and let it set.

    Place the flan and fruit jelly on a plate. Then, add 20gr of condensed milk, 10gr of coconut milk, and 10gr of aloe vera.

Tips for choosing fresh and delicious fruits to make fruit caramel

  • Dragon fruit: The stem – the ears are soft and flexible, light bright color.
  • Kiwi: Touch the stem part; if the stem is soft, the fruit is sweet, while a hard stem indicates the fruit is sour, depending on individual preferences. Additionally, observe the fruit’s exterior; fruits with many fine hairs on the outside are also good fruits, or if the skin is smooth and has no blemishes, it is a good fruit. Avoid choosing fruits with insect bite marks or bruises.
  • Mango: Choose fruits with an even yellow color, the flesh of the mango should be firm at the stem, not soft or wrinkled, with the stem slightly sunken into the flesh. If you want to select a good mango, it should have tight skin, not rough, and small dark spots.
  • Jackfruit: Choose jackfruit with large open spikes, with a good distance between the spikes, and a fragrant smell.
  • Watermelon: Buy watermelons with small, shriveled stems; the more curled the dried stem is, the better, as this indicates that the watermelon is ripe and will be very delicious and sweet.
  • Strawberries: Quality strawberries are usually bright red and plump, fragrant, with green leaves.
  • Grapes: You should buy grapes with fresh stems and firm skin.
