How to make Green Tea Madeleine Shell Cakes

  • Mix dry ingredients

    Add about 160g of sugar into a bowl, then sift about 240g of flour through a sieve into the bowl of sugar, sift in 1 tablespoon of matcha powder, 1 teaspoon of baking powder, and 1/2 teaspoon of salt. Use a whisk to mix all the dry ingredients together.

  • Beat eggs and melt butter

    Place a pot on the stove, add 113g of unsalted butter into the pot, melt the butter over low heat, stirring gently while melting to prevent the butter from burning at the bottom of the pot. Then pour the butter into a bowl and let it cool.

    Next, crack 2 eggs into a clean bowl, add about 1 tablespoon of fresh milk to the bowl. Then use a whisk to beat the eggs.

  • Mixing the batter

    Pour the prepared egg mixture into the bowl of dry flour, using a flat whisk to mix thoroughly until the flour is completely dissolved.

    Next, add about 1/2 cup of melted butter to the mixture, and mix well. Then, add the remaining amount of butter, mixing until the mixture is homogeneous and has a soft, pliable consistency.

    Cover the bowl of mixture tightly with plastic wrap and place it in the refrigerator for about 3 hours to let the batter rise.

    Note: Let the melted butter cool to a warm temperature before adding it to the bowl; do not add hot butter directly as it will cook the batter, preventing the cake from rising.

  • Baking the cake

    Preheat your oven to 200 degrees Celsius to ensure a stable temperature while baking.

    While waiting for the oven to heat up, use a brush to spread a layer of unsalted butter on the shell mold, then sprinkle a very thin layer of flour into the mold, afterwards, turn the mold upside down and gently tap the bottom to let the excess flour fall out.

    The cake batter mixture, after being chilled in the refrigerator, should be taken out and mixed gently. Next, scoop about 1 tablespoon of batter into the center of the cake mold.

    Repeat this process until all the cake batter is used up.

    Finally, place the cakes in the oven at a temperature of 190 degrees Celsius for 10 – 13 minutes.

    Once baked, take the cakes out of the oven and let them cool for about 3 minutes. Then, slowly lift the cakes out of the mold.

    Madeleine shell cakes have a distinctive aroma of butter, milk, and a light fragrance of matcha, with a beautiful golden-baked shell shape.

    The cakes are soft and fluffy, with a slight bitter taste of matcha blended with the rich sweetness of egg and milk. You can sprinkle a little powdered sugar on top of the cake and enjoy it with a cup of hot tea to balance the flavors of the cake. How to Make Green Tea Chocolate Madeleine Shell Cake

  • Mix the Egg and Sugar Mixture

    Put about 4 chicken eggs, 75g sugar, 1/2 teaspoon salt, 10g honey, 2ml vanilla extract into a mixing bowl. Use a whisk to beat the egg mixture well.

  • Mix the Batter

    You mix 55g of flour type 8, 15g almond flour, 10g matcha powder, 3g baking powder and then sift the flour through a sieve into the egg mixture.

    Continue using the whisk to mix the mixture in a circular motion until the flour dissolves and the mixture is homogeneous.

    Melt about 80g of unsalted butter, let it cool and then add it to the batter bowl, add about 1 tablespoon of lemon juice, mix well until the batter is elastic and smooth.

    Wrap with plastic wrap and let the batter rest in the refrigerator for about 1 hour for the dough to set.

    After about 1 hour, take the batter out of the refrigerator and mix it again.

  • Pour into molds and bake

    To stabilize the oven temperature, preheat the oven to 230 degrees Celsius for 10 minutes.

    Next, use a brush to spread a layer of unsalted butter into the shell mold, then sprinkle a thin layer of flour into the mold, turn the mold upside down and gently tap to remove excess flour.

    Place the matcha batter into a piping bag, then pipe the mixture into the mold in a zigzag pattern, and add chocolate chips on top of the cake surface.

    First, bake the cake at 220 degrees Celsius for 4 minutes, then lower the temperature to 190 degrees Celsius for 3 minutes, and finally bake at 160 degrees Celsius for 3 minutes to allow the cake to rise and cook evenly.

  • Making chocolate coating and dipping the cake

    Steam 80gr of white chocolate, stir well until the chocolate melts, then add about 3gr of matcha powder and mix well.

    Transfer the chocolate mixture into a piping bag, pipe a line into the shell-shaped cake mold.

    Finally, place the shell-shaped cake into the mold, press gently, and put it in the refrigerator for about 30 minutes for the chocolate layer to set.

Difference between regular green tea powder and matcha powder

  • Matcha powder is a fine powder made from 100% young tea buds. This type of powder is distinctly different from green tea powder in terms of nutritional value and price, as green tea powder is only ground from 30% of young tea buds and the remaining 70% is young tea leaves.
  • Matcha powder has a bright green color and a sweet aftertaste bitterness, unlike green tea powder which has a dark green color, may be slightly yellowish, and has astringent bitterness.
