Frogs 3 frogs (500gr) Scallions 3 stalks Shallots/garlic/fried pork fat 2 tablespoons Chili sauce 2 teaspoons Fish sauce 2 teaspoons Annatto oil 1 teaspoon Common spices a little (salt/pepper/MSG/seasoning)

How to prepare Grilled Frog with Scallion Oil in Foil

  • Preliminary processing of frog

    For convenience, when buying frogs, you should ask the seller to prepare them for you, then at home you just need to eliminate the frog’s odor by rubbing salt evenly on the frog meat, then rinse well with water and let it drain.

  • Marinating the frog

    Add 2 tablespoons of shallots, garlic, and fried pork fat into a bowl, then add 1/2 teaspoon of seasoning powder, 1/2 teaspoon of salt, 1/3 teaspoon of monosodium glutamate, 1/2 teaspoon of ground pepper, 2 teaspoons of chili sauce, 2 teaspoons of fish sauce, 1 teaspoon of annatto oil, and all the chopped scallions.

    Next, mix well until the spices dissolve completely.

    Then add the entire marinating sauce mixture to the frog. Mix thoroughly and let the frog absorb the spices for about 30 minutes to 1 hour.

  • Wrapping and Grilling Frog

    Prepare a sheet of aluminum foil, place the frog meat on top, then drizzle the remaining sauce into the frog’s belly, and wrap it tightly in the foil.

    Prepare an electric stove, place the foil-wrapped frog on a water rack, set it on the stove, and grill at medium heat for about 25 – 30 minutes until the frog is cooked evenly and emits a fragrant aroma.

Frog 3 pieces (large type) Pork 20 gr Minced chili 1 piece Minced galangal 1 tablespoon Sliced lemongrass 50 gr Fish sauce 2 teaspoons White wine a little Common spices a little (salt/ seasoning powder/ monosodium glutamate)

How to choose fresh and good pork

  • For grilling, you should choose the pork belly or shoulder meat which has both lean and a bit of fat, as it will be more tender and delicious when grilled.
  • Choose pork that has a bright pink color, no strange smell, and the fat is translucent white. Meat that is pale and smells bad is usually old and not good.
  • Pressing the meat with your hand should show elasticity, the meat should be firm without leaving a dent, and dry without being sticky to the hand indicates good quality meat.
  • Absolutely do not buy if you see small grains like rice mixed in the meat fibers as these could be tapeworm eggs which are very harmful if ingested.
