How to Prepare Grilled Catfish with Ginger and Lemongrass

  • Prepare the catfish

    Wash the catfish thoroughly with diluted salt water, cut off the fins, clean the intestines, and rinse 2 – 3 times with clean water, then let it drain.

  • For this recipe, you should select green bird’s eye chili or green horn chili for an appealing aroma in the final product.
  • Choose chilies that have a uniform color, are bright green, have a natural smell, and do not have any strange odors.
  • It’s best to select those with intact green stems, firmly attached to the fruit. Chilies that feel firm and solid when squeezed, and are not hollow, are fresh.
  • Avoid choosing bird’s eye chilies that are wilted, bruised, have brown spots on the skin, or are turning yellow and ripening.
