What is Mắc Khén?

  • Mắc khén is a type of seed that grows in clusters on a woody tree, commonly found in the Northwest regions and widely used by the White Thai ethnic group.
  • People will harvest mắc khén around November, when it gradually ripens, and it will be dried for later use.
  • Mắc khén has a taste quite similar to pepper but is spicier and more pungent, ground into a powder and used as a spice.

What is dổi seed?

  • Dổi seed is one of the specialties of the Northwest mountains that is used as a spice for many dishes, creating a unique flavor of the Northwest.
  • Dổi seed, along with mắc khén, forms a spice that is distinctly characteristic for dipping or marinating smoked buffalo meat, and pork.

Where to buy dổi seed, mắc khén seed, cardamom, and star anise?

  • You can buy dổi seed and mắc khén seed at specialty stores in the Northwest region or on e-commerce websites.
  • The price of dổi seed ranges from 120,000 to 150,000 VND/30g, and the price of mắc khén ranges from 35,000 to 50,000 VND/30g (prices updated on 03/02/2021).
  • Cardamom, star anise can be purchased at traditional medicine shops or ordered on e-commerce websites.

Step 2 Make the marinade for grilled chicken in a pan
  • Prepare and marinate the chicken

    The chicken you bought has been cleaned, rinse it briefly with water. To eliminate the smell, use 1 tablespoon of vinegar and 1 tablespoon of salt to scrub thoroughly inside and outside, then rinse well with water and let it drain.

    Next, put on gloves and evenly spread the marinade mixture over the chicken, massage it well both outside and inside, and let the chicken marinate for at least 2 hours for the flavors to seep in.

    Tip: To make the chicken absorb the marinade better, you can marinate it overnight so that the flavors penetrate the meat more.

  • Fried Chicken

    Put shredded lemongrass, 10 fresh lime leaves, 2 cloves of garlic, 500ml of cooking oil into the pan, place the chicken and chicken organs on top, and cover. Then place the pan on the stove, turn on the heat and fry on low for 15 minutes.

    Next, increase the heat to medium and fry for another 5 minutes, then open the lid, and remove the heart, liver, and gizzard.

    Remove the shredded lemongrass, then turn the chicken over and fry for another 3 minutes until the chicken is evenly golden, turn off the heat, take the chicken out, and enjoy!

    Tip: To ensure the chicken is evenly fried, while frying, use a spoon to ladle the hot oil over the chicken!

    Local chicken 1.5 kg (1 chicken) Chopped lemongrass 1 tablespoon Sliced galangal 1 tablespoon Minced ginger 1 tablespoon Chopped green onion 1 stalk Cilantro 2 stalks Garlic 3 cloves Sliced chili 1 piece Fresh lime leaves 15 leaves Soy sauce 2 tablespoons Five spice powder 1 teaspoon Annatto oil 1 tablespoon Lime juice 4 tablespoons Fish sauce 1 tablespoon Common seasoning to taste (Salt/ sugar/ monosodium glutamate)

    How to prepare Roasted Chicken with an oven

    • Prepare the chicken

      The chicken has been pre-prepared; to eliminate the odor, wash it thoroughly with water, then rub salt all over the chicken’s body.

      Wash it again with water 2 – 3 times, then let it drain.

      How to reduce the odor of chicken:
      • Remove the fat glands, excess fat, and wash away any remaining blood inside the chicken.
      • Use smashed ginger to rub around the chicken for about 10 minutes, then wash it with water several times.

      In a mortar, add 1 tablespoon of sugar, 4 cloves of garlic, 1 tablespoon of minced lemongrass, 1 tablespoon of sliced galangal, 1 tablespoon of chopped ginger, 1 stalk of chopped green onion, 2 sprigs of coriander, and 5 fresh kaffir lime leaves.

      Add 1/2 teaspoon of salt, 1 teaspoon of monosodium glutamate, 2 tablespoons of soy sauce, 1 teaspoon of five-spice powder, 1 tablespoon of annatto oil, cover the mortar, and blend until smooth for 2 minutes.

    • Marinate the chicken

      Pour the marinade mixture over the chicken, using your hands to evenly spread the mixture inside and outside the chicken, and let the chicken marinate for 20 minutes.

      Tip: Marinate evenly inside and outside to help the chicken absorb the spices better.

    • Make the dipping sauce

      Add 6 cloves of garlic, 6 tablespoons of sugar, 1 teaspoon of salt, 2 teaspoons of monosodium glutamate, 3 fresh lime leaves, 1 sliced chili, 4 tablespoons of lime juice, and 3 tablespoons of filtered water into the mortar.

      Add 1 tablespoon of fish sauce, then cover the mortar and blend for 1 minute until the mixture is well combined, and you have completed the dipping sauce.

    • Roast the chicken

      Place smashed lemongrass on the baking tray, then add 7 fresh lime leaves, 2 cloves of garlic, and then place the marinated chicken on the tray.

      To maintain a stable temperature in the oven, turn on the oven at 180 degrees Celsius for 10 minutes. Then put the chicken in to roast at 180 degrees Celsius for 25 minutes.

      After that, open the oven, turn the chicken over, and roast the chicken at 160 degrees Celsius for 30 minutes.

      Once the chicken is fully roasted, take it out and serve it to the family to enjoy.

    • When buying local chicken, select those with a slender body, light yellow skin, thin, smooth, and high elasticity, with darker yellow in some areas like the breast, wings, and back.
    • Press on the thighs and breasts to check if the chicken has been injected with water. If the chicken feels mushy, slippery, or deformed, do not buy it.
