How to choose fresh and delicious duck meat
- If the meat is still whole and not slaughtered, choose ducks that are still moving actively, with their eyes open looking around. Ducks that are lying still may be dying or have had bananas stuffed in their throats, making it hard for them to breathe, in order to increase their weight.
- If it is prepared meat, choose ducks that have a naturally bright pink skin color, and when touched, they should have a certain level of elasticity and not be soft and mushy.
- Do not buy prepared ducks that have bruises on their bodies or have a purplish skin color, as this may indicate that the meat was infected before being processed.
How to clean duck meat and eliminate unpleasant odors
- Method 1: Use ginger and coarse salt to rub the duck meat inside and out continuously for 5 minutes, then rinse with clean water to eliminate the fishy smell of duck meat.
- Method 2: Rice washing water is also effective in removing the fishy smell; you just need to soak the duck in rice washing water for 15 minutes, then rinse again with water. Additionally, using a similar method, you can replace rice washing water with diluted white wine!
