How to Cook Grilled Green Mussels with Scallions

  • Prepare the mussels

    When buying mussels, use a brush to clean the mud and algae on the outside of the shell.

    Then rinse with water until clean.

    Wash the scallions thoroughly and chop them finely.

    Place a pan with hot oil on the stove, add all the scallions, 2 teaspoons of seasoning, and 1 teaspoon of ground pepper, stir well until the scallions wilt, then turn off the heat.

    • You can add a little sugar to the scallions and mix well.
    • Then pour in the hot oil, mix well to cook the scallions; this method will preserve the color of the scallions.

    Arrange the mussels neatly on the grill, grill until the mussels open.

  • Prepare the Mussels

    Clean the green mussels’ shells thoroughly using a brush, then rinse with water, and use a knife to separate the mussel from its shell.

    Tip: If you have time after purchasing the mussels, you can soak them in water with a bit of salt for about 4 – 5 hours to help them expel any mud inside.

    Use a spoon to spread a layer of cheese and a little olive oil on the mussels, then prepare to grill.

    Put all the green mussels in the oven, grill at a temperature of 200 degrees Celsius for about 10 minutes.

How to choose delicious mussels

  • You should choose mussels that have their shells still closed and intact because they are still alive; do not buy those with broken shells or cracks, as they may be dead.
  • You can touch the mussels that are slightly open; if they close immediately, then they are good to buy. Those that do not close or close slowly are not fresh anymore.
  • Mussels that are the length of your index or middle finger and about 5cm thick tend to be much fattier than the others; you can consider this a little tip when choosing mussels!
