  • Prepare the ingredients

    The salmon fins you bought, if you purchased frozen salmon, thaw them, then rinse briefly with water and soak in 800ml of unsweetened fresh milk for 10 minutes. After that, take them out and let them drain.

    Next, take a piece of foil about 5m long and fold it in half, then fold it in half again.

    Finally, tightly fold the two edges of the foil you just made into a bag shape, sealing 3 sides while leaving 1 side open, then place the salmon fins inside.

    Peel the shallots and garlic, then wash them clean, let them drain, and chop finely.

  • Making the sauce

    Add 2 tablespoons of cooking oil to the pan, wait until the oil is hot, then add minced onion and garlic, sauté evenly until fragrant. Then add 2.5 teaspoons of salt and 2.5 teaspoons of monosodium glutamate.

    Stir evenly over medium heat until the onion and garlic absorb the spices and turn light yellow, then add 1/2 jar of chili paste (about 1.5 tablespoons) along with 1.5 tablespoons of water.

Salmon fins 200 gr Carrot 1 piece Lettuce 1 head Ground garlic 50 gr (2 cloves) Ground shallots 10 gr (1 bulb) Ground chili 1 teaspoon Honey 1 tablespoon Lemon juice 1/2 tablespoon Fish sauce 2 tablespoons Sesame oil 2 teaspoons Common seasoning to taste (seasoning powder/ ground pepper/ sugar)

How to choose and buy good quality honey

  • Good quality honey will have a uniform color; if the honey is dark in some places and light in others, there is a high chance it has been mixed.
  • When buying, you can use the method of dropping a few drops into a glass of water to check if the honey is of good quality. If the honey does not dissolve and settles at the bottom of the glass, it is real honey, and you should buy it.
  • Additionally, you can also test by placing a green onion stem in it for 5 minutes. If the green onion wilts when pulled out, your honey is real; otherwise, if it stays fresh, you should not buy it.

    Put the salmon fins in a bowl with 1 tablespoon of honey, 1/3 tablespoon of seasoning powder, 1/2 teaspoon of ground pepper, 2 teaspoons of sesame oil, and minced shallots.

    Mix well, then cover the bowl tightly with plastic wrap and place it in the refrigerator to marinate for about 20 minutes for the spices to penetrate the fins.

  • Make the sauce

    Add 2 tablespoons of fish sauce, 3 tablespoons of water, 3 tablespoons of sugar, and 1/2 teaspoon of seasoning powder into a bowl, mixing well until the ingredients dissolve completely.

    Line the air fryer with a layer of aluminum foil, then add the fish, close the lid, and grill for about 10 minutes at 140 degrees Celsius until one side of the salmon fins is golden brown, then remove it.
