How to prepare Grilled Cod with Miso Sauce
-
Prepare and Marinate the Cod
Rinse the cod fillets with water. To eliminate the fishy smell, place the fillets on a plate and evenly sprinkle 2 teaspoons of salt on both sides of the fish, marinating it for 30 minutes.
After that, use 2 tablespoons of sake to wash off the salt. Gently use a paper towel to pat the surface of the fish dry.
-
Make the Sauce
In a bowl, combine 6 tablespoons of miso, 3 tablespoons of mirin, and 3 tablespoons of sake, mixing the ingredients well.
-
Marinate fish with sauce
You pour the sauce mixture into a container, arrange each piece of fish fillet inside, and use a spoon to drizzle the sauce evenly over the surface of the fish.
After that, you seal the container tightly and place it in the refrigerator, letting the fish marinate for about 1 day to absorb the flavors.
Tip: If you don’t have time, you can use a skewer to poke into the fish and marinate for about 1 hour for the fish to absorb the flavors. -
Grill fish
Preheat the oven to 200 degrees Celsius for 10 minutes. While waiting for the oven to heat up, take the fish out and gently wipe the surface of the fish to completely remove the sauce.
Next, you line the baking tray with parchment paper or aluminum foil and place the fish on it (with the skin side up). You put the fish in to grill at 200 degrees Celsius for about 20 – 25 minutes until the fish is cooked.
Tip: Remove the miso sauce from the surface of the fish so that the fish does not get burnt edges while grilling. -
Final product
The grilled cod is fragrant, with white, fatty, sweet fish soaked in the delicious and attractive miso sauce, inviting the family to enjoy it.

What is cod?
- Cod is a type of sea fish, living in the Atlantic and Pacific Oceans. Cod is likened to the pride of the ocean and is known as one of the 10 best-tasting sea fish in the world.
- The fish has lean meat, few bones, and a naturally delicious flavor that is not dry.
- In Vietnam, cod is often imported and supplied to high-end hotels and restaurants. You can find cod at seafood markets or large imported goods markets, or you can purchase it on specialized seafood trading websites!
How to choose fresh and delicious cod
- Fresh cod meat should have a bright color. If the meat turns dark or green, it indicates that the fish is spoiled or has gone bad.
- Additionally, good meat will have extremely good elasticity. When pressing your finger into the meat, if it leaves a dent but quickly returns to its original state, the fish is still fresh.
- Observe the surface of the meat; it should be dry, not wet or leaking strange fluids. The fat lines on the fish should be uniform in color and bright, not dull or have brown spots.
- Moreover, fresh fish will have a distinctive aroma, with no strange or foul smell.
How to prepare cod without a fishy smell
You can refer to one of the following methods to eliminate the fishy smell of cod:
Method 1: Remove the fishy smell of cod with lemon
- Add 2 – 3 tablespoons of lemon juice along with 1 teaspoon of salt into a bowl of filtered water.
- Put the cod in and gently stir, letting it sit for about 30 seconds to 1 minute, then rinse with clean water. You can use a slice of lemon that you just squeezed to rub and gently massage the fish meat for better cleanliness.
Method 2: Remove the fishy smell of cod with alcohol and ginger
- Take some ginger, chop it finely or smash it. Then put it in a bowl and pour in some white alcohol; if you don’t have alcohol, you can also substitute it with vinegar, then add the cod and stir gently.
- Soak the fish in the mixture for about 7 – 10 minutes, then take it out and rinse it with cold water.
