Cashews 70 gr Almonds 65 gr Pine nuts 70 gr Pistachios 65 gr Roasted peanuts 38 gr Dried dates 255 gr Honey 85 gr

What are pine nuts? Where to buy?

  • Pine nuts, known in English as pine nuts, are seeds extracted from pine cones (trees belonging to the Pinaceae family, genus Pinus). Currently, there are 29 species of pine trees, of which 20 species produce valuable harvestable pine nuts that provide economic benefits.
  • Pine nuts are elongated, with a shell that ranges from light brown to dark brown, and the inner kernel is off-white. When roasted, these nuts are very fragrant and have a rich, creamy, and mildly sweet taste.
  • You can buy pine nuts at markets, specialty dry food stores, baking supply shops, or online on various e-commerce websites.

How to make Protein Bar

  • Roast the nut mixture

    Place a pan on the stove, add 70g of cashews, 65g of almonds, 70g of pine nuts, and 25g of chopped pistachios. Stir the nut mixture over medium-low heat until fragrant and golden brown.

    Next, add 38g of roasted peanuts and stir the nut mixture once more before turning off the heat.

  • Prepare and finely grind the dried dates

    Use a knife to cut the dates in half lengthwise to remove the pit.

    Then, put the flesh of the dates and 85g of honey into a blender and blend until smooth.

  • Mix the nut mixture with the finely ground dates

    Add the blended date mixture and the roasted nut mixture into a bowl. Mix well to combine all the ingredients.

  • Press the mold and chill

    Line the mold with parchment paper, then spread the mixed nut mixture evenly, using a spoon to press it tightly and chill the bars for 1 hour in the refrigerator.

    After 1 hour, take the bars out and cut them into long pieces of a convenient size.

Peanuts 40 gr Cashews 47 gr Almonds 30 gr Cocoa powder 1 tablespoon (unsweetened) Dark chocolate 100 gr Brown chocolate chips 40 gr Dried dates 255 gr Unsalted butter 1 teaspoon Vanilla extract 1/2 teaspoon

How to choose dark chocolate for protein cake

  • You can choose chocolate in the form of chips or whole bars. Additionally, you should select dark chocolate with a cocoa percentage of 70% or higher so that the cake has a bittersweet taste, making it less cloying and healthier!
  • You can easily find these types of chocolate at chocolate shops, supermarkets, or on reputable e-commerce websites.

How to make chocolate protein bar

  • Roast the nut mixture

    Place a pan on the stove, add 40g of peanuts, and roast over medium heat for 5 – 10 minutes. Then, transfer the peanuts to a bowl to set aside.

    Next, add 30g of almonds and 47g of cashews to the pan and continue to roast for 10 – 15 minutes.

  • Blend the chocolate nut mixture

    Add the roasted cashews, almonds, and peanuts, 1 tablespoon of cocoa powder, and 1/2 teaspoon of vanilla extract into the blender and blend until the nuts are finely ground.

    Once the nuts are finely ground, add 255g of pitted dried dates. Continue blending until the mixture is well combined and sticky.

    Finally, add 40g of brown chocolate chips and pulse a few times to combine the chocolate into the mixture (do not blend until smooth).

  • Press into the mold

    Wrap a layer of aluminum foil around the mold, then spread a layer of unsalted butter evenly to prevent sticking.

    Next, evenly spread the nut mixture into the mold and press tightly with a spoon. Chill the bar in the refrigerator for 1 hour.

  • Melting chocolate

    Place 100g of dark chocolate and 1 teaspoon of unsalted butter in a bowl and heat in the microwave for 20 seconds.

    After 20 seconds, take the bowl out, stir well, and heat for another 20 seconds.

    Pour the chocolate mixture over the compressed nut mixture, gently tap the mold on the table a few times for the chocolate to spread evenly. Chill the cake for the second time in the freezer for 30 minutes.

    Finally, remove the cake from the mold, and use a knife to cut the cake into several long pieces of bite-sized portions.
