How to Make Pickled Radish in Fish Sauce

  • Prepare the ingredients

    After cleaning, cut the white radish into small, even pieces. Marinate the white radish with salt, adding 2 tablespoons of salt into a bowl containing the radish. Peel the garlic, remove the stems from the chili, and then slice thinly.

    Sun-dry the radish for a day (drying in conditions of 32 degrees Celsius for one day), if you cannot sun-dry, place it in an oven at 120 degrees for about 3 – 4 hours until the radish pieces are dry and firm.

  • Make pickled fish sauce

    Add 2 tablespoons of fish sauce and 2 tablespoons of sugar into a bowl (rice bowl), mix them together in a 1:1 ratio.

    Place a pot on the stove, add the prepared fish sauce and sugar mixture, and cook until it boils, then turn off the heat and let it cool.

    Layer a layer of white radish alternating with a layer of garlic and chili in a jar. Then, gradually pour the fish sauce into the jar until the radish is completely submerged.

    Let the radish soak in fish sauce for about 1 – 2 days before it can be used.

How to prepare Pickled Radish in Soy Sauce

  • Prepare the white radish

    Buy white radish, peel the skin, cut it into bite-sized pieces, and then wash it thoroughly.

    Then, add 1 bowl of salt to the radish and soak it for 2 hours. During the soaking process, shake it a few times to allow the radish to absorb the salt evenly, reducing its pungent smell.

  • Dry the white radish

    After 2 hours, wash the soaked radish several times with clean water to reduce the saltiness. Next, spread the radish out on a tray to dry in the sun. Prepare garlic and chili by slicing them thinly and drying them together.

    Tip:
    • You can dry it for 1 to 2 sunny days depending on your preference. If you like it chewy, you can dry it longer; if you prefer it crispy, then dry it less.
    • If there is no sun, you can use a dehydrator or an air fryer to dry the radish until slightly shriveled!

  • Prepare the soy sauce for pickling white radish

    Put into the pot 1 cup of sugar, 1 cup of soy sauce, 1 cup of filtered water (all using a rice bowl), bring to a boil and then let it cool. Clean the pickling jar thoroughly and let it dry completely. It’s best to use a glass jar instead of a plastic jar to ensure the flavor is preserved.

  • Pickle the white radish

    Gradually add the radish, garlic, and dried chili to the jar, then pour in the cooled soy sauce. Close the jar and let it sit at room temperature for 1 day before it can be eaten.

    If you want to keep it longer, you should put it in the refrigerator to preserve it!

How to choose fresh and delicious white radish

  • Fresh and delicious white radish has a smooth surface, few roots, feels firm when pressed, and has the characteristic aroma of white radish.
  • You should choose white radish of moderate size, those that feel heavy in hand because such radishes will not be hollow inside.
  • Choose white radish that is not too young or too old so that the dish will taste better after soaking.
  • Avoid choosing white radishes with a soft and mushy surface, and a bad odor because these are radishes that have spoiled and are no longer fresh.

Tips for successfully preparing the dish

  • When preparing white radish, just wash the skin really clean without peeling off the outer skin of the radish.
  • When boiling fish sauce with sugar, use low heat so that the fish sauce and sugar blend better.
