Prawns 200 gr Water lily 200 gr Bean sprouts 50 gr Red onion 1 bulb Garlic 3 cloves Scallions 10 gr Oyster sauce 1 teaspoon Cooking oil 2 tablespoons Vinegar 3 tablespoons Common seasonings a little (Sugar/ seasoning powder/ pepper)

How to choose good water lily

  • You should choose flowers that are just beginning to bloom, fresh flowers that have just been picked, intact, not bruised or eaten by pests.
  • Avoid choosing fully bloomed flowers as well as flowers that are still green, as they will be less tasty.

How to cook Stir-fried Shrimp with Water Lily Flowers

  • Prepare the ingredients

    To clean and remove the fishy smell of the shrimp, wash it thoroughly with water after buying.

    Then put the shrimp in a basin with 1 tablespoon of salt and 3 tablespoons of vinegar, gently massage for about 2 minutes, and rinse 2 – 3 times with water, then drain.

    Remove the hard stem from the water lily flowers, take the petals, then wash them and let them drain.

    Wash the bean sprouts and let them drain. Cut off the roots of the green onions, wash them, and cut them into small pieces. Peel and slice the shallots. Peel the garlic, crush it, and chop it finely.

  • Marinate the shrimp

    Marinate the shrimp with 1 teaspoon of seasoning powder, 1 teaspoon of sugar, 1 teaspoon of oyster sauce, and 1 teaspoon of pepper, mix well and let it marinate for 10 minutes to absorb the spices.

    Place a pan on the stove, turn on medium heat to warm the pan, add 2 tablespoons of cooking oil, then add the sliced shallots and minced garlic to sauté until fragrant.

    Next, add the marinated shrimp to the pan and stir-fry, mixing well until the shrimp meat is firm, stir for about 5 minutes until the shrimp is cooked.

    Wash the shrimp with clean water, then soak them in a bowl of diluted saltwater for about 5 minutes, then drain.

  • Do not choose soft, mushy shrimp that are white as they may have gone bad, or shrimp with tails fanned out like a fan, swollen belly and back, with liquid oozing from the segments, and pale, inconsistent colors as they have been chemically treated.

  • Use fresh or dried cinnamon: Use a piece of fresh or dried cinnamon, put it in boiling water to blanch the shrimp. This method will make the fishy smell of the shrimp disappear, and the shrimp will taste much better than the usual cooking method.
  • Use sugar and white wine: Dissolve sugar in wine, and soak the shrimp for about 5 minutes; the fishy smell of the shrimp will definitely be gone.
