- To buy delicious pork belly, you should choose a piece of meat that has a balanced amount of lean meat and fat, with a thick outer skin layer.
- You should select a piece of meat with a fat layer about 2/3 of a finger thick, with the lean meat tightly attached to the fat layer. However, be careful; to buy pork belly that is just right to eat and not too tough, you should not choose a piece with an outer layer of fat and skin that is too thick, as this indicates an older pig.

Marinate the pork belly
Put the sliced pork into a bowl, marinate with 2 tablespoons of fish sauce, 1 tablespoon of sugar, 1/2 tablespoon of monosodium glutamate, 1/2 tablespoon of chili powder, 1 teaspoon of ground pepper, and 1/2 tablespoon of cooking oil.
