  • When buying shrimp, pay attention to the legs; good shrimp will have transparent legs that are firmly attached to the body. If the legs turn black and are loose, the shrimp is stale and not tasty.
  • Fresh shrimp will have a slightly curved body, firm meat, flexible and intact shell, and the head will be tightly attached to the shrimp body.
  • Do not buy shrimp with spread-out, loose tails, missing tail fins, and not neatly arranged. They may have been out of water for a long time, preserved with chemicals that make them taste bad and can be harmful to health.

How to choose delicious pork belly

  • To buy delicious pork belly, you should choose a piece of meat that has a balanced amount of lean meat and fat, with a thick outer skin layer.
  • You should select a piece of meat with a fat layer about 2/3 of a finger thick, with the lean meat tightly attached to the fat layer. However, be careful; to buy pork belly that is just right to eat and not too tough, you should not choose a piece with an outer layer of fat and skin that is too thick, as this indicates an older pig.
  • In addition, fresh pork belly will have a dry outer membrane, with a light red or bright pink color. When cut, the meat will have a bright pink color, white-pink skin, and a soft texture. The fat interspersed with the lean meat has a bright and firm color.
  • Absolutely do not buy pork belly that has an unusual smell, leaves fingerprints when pressed, or has a slimy surface.

How to make Stir-fried Shrimp with Pork Belly

  • Prepare the ingredients

    For the shrimp, cut off the head, legs, and tail, then wash thoroughly and drain.

    Wash the pork belly with diluted salt water to reduce the smell, rinse with clean water, then slice into thin pieces for easy eating.

  • Marinate the pork belly

    Put the sliced pork into a bowl, marinate with 2 tablespoons of fish sauce, 1 tablespoon of sugar, 1/2 tablespoon of monosodium glutamate, 1/2 tablespoon of chili powder, 1 teaspoon of ground pepper, and 1/2 tablespoon of cooking oil.

    Mix the meat well and let it marinate for 10 minutes for the flavors to soak in.

    Then serve the shrimp with pork belly on a plate, sprinkle a little ground pepper, and it’s ready to enjoy.
