How to make Sticky Rice Cake

Roasting the flour
Put the sticky rice flour and tapioca flour into a large bowl, use a spoon to mix the two types of flour together.
Place a large pan on the stove, pour the mixed sticky rice flour and tapioca flour into it, and roast in the pan along with fresh pandan leaves.
Stir continuously until the pandan leaves turn a mossy green color, then the flour is cooked. Turn off the heat and let the flour cool down.

Cooking the syrup
Place a pot of water on the stove, do not add too much water.
Then add sugar. Use a spoon to dissolve all the sugar in the water.
Cook until the sugar thickens slightly, when the sugar pulls threads, take the pot off the heat, open the lid to let the sugar cool.
Before the sugar cools, you need to add a little lemon juice and grapefruit flower water as well.
Then use a spoon to mix the ingredients evenly together.

Mixing the flour
Continue to gradually add the roasted tapioca and sticky rice flour mixture into the pot of syrup you just made.
Wear gloves and mix the ingredients until the flour has absorbed all the syrup.

Shaping the cake:
Dust a layer of flour over the cake mold.
Then pour the flour mixture along with syrup into the mold, pressing firmly to shape the cake.
Be careful not to move the cake for 15 minutes to allow the batter inside to set, preventing it from breaking or becoming too soft.

How to make Green Bean Paste Cake

Cook the sugar water
First, add granulated sugar and filtered water into a pot, boil until the sugar completely dissolves, and then simmer for about 10 minutes until the syrup becomes sticky and thick, then remove from heat and let it cool.
Next, add lemon juice and grapefruit flower water and stir well.

Make the cake filling
Soak the green beans in water for about 4 – 5 hours until soft, then drain and put them in a pot, add more water and cook until very soft.
After the beans are cooked, use a blender to grind them to a fine paste. Add sugar to the green beans, stir evenly, then place on the stove, simmer on low heat until the mixture thickens.
Mixing the dough for the cake crust
Pour the cake flour and the syrup into a large bowl, then mix well until the sugar and flour blend smoothly together.
Shaping the cake:
Pour the sugar-mixed dough into 2/3 of the cake mold, add a layer of green bean filling in the middle, and finally sprinkle a layer of mixed flour and sugar on top to fill the mold.
Use your hands to press the mixture tightly in the mold and leave it like that for at least 30 minutes before taking the cake out and enjoying.
