How to Cook Stir-fried Eggplant with Garlic

  • Prepare the Ingredients

    Buy eggplant, wash it clean with water, then cut it into slices about 1/2 finger thick.

    Peel the garlic and use 2 cloves minced, 2 cloves sliced thinly. Wash the cilantro and chop it finely.

    Place a pan on the stove, turn on medium heat, and heat 2 tablespoons of cooking oil, adding all the prepared garlic to sauté until fragrant.

    When the garlic is fragrant, add all the sliced eggplant and stir-fry quickly for about 1 minute, then add 1/2 cup (rice bowl) of water to the pan with the eggplant.

    Cook on medium-low heat, when the water starts to simmer, add 1 teaspoon of vegetarian seasoning, 1/4 teaspoon of salt, 1/3 teaspoon of monosodium glutamate, and 1/2 teaspoon of sugar, stir-frying to absorb the seasoning, then taste and adjust to your preference.

    After stir-frying the eggplant for a total of about 5 more minutes, the eggplant will be cooked. Turn off the heat and add 1/3 teaspoon of ground pepper along with finely chopped cilantro for fragrance.

  • Prepare the Ingredients

    Wash the eggplant, cut it into bite-sized pieces, then soak it in salt water for about 5 minutes, rinse with water, and let it drain.

    Peel the ginger, wash it, and chop it finely. Wash the lemongrass thoroughly, slice half of it into small pieces, and chop the other half finely.

    Prepare the sauce by mixing in a bowl 3 tablespoons of soy sauce, 1.5 tablespoons of chili sauce, 1 tablespoon of sugar, and 1/2 tablespoon of salt.

    Place a pan on the stove, heat 2 tablespoons of cooking oil over medium heat, add minced ginger and lemongrass, stir for about 3 minutes, then add the eggplant and continue to stir until the eggplant is slightly soft.

    Then pour the sauce mixture into the pan, stir continuously for about 7 minutes until the eggplant is cooked and evenly colored. Finally, add 1/2 teaspoon of ground pepper, stir well, and turn off the heat to complete the dish.
