How to choose delicious shiitake mushrooms
You can use dried or fresh shiitake mushrooms.
For dried shiitake mushrooms
- For fresh mushrooms, you should buy those with bright colors, a distinct aroma, and avoid choosing mushrooms that are bruised or have a rotten smell. A cut that leaks a milky white substance is a sign of poisonous mushrooms. Avoid mushrooms with dark spots or wrinkles on the cap, and do not choose slimy mushrooms. Fresh mushrooms will have a thin layer of fuzz like paper on them. Choose mushrooms with a firm stem, uniform color; if the mushrooms are open, the gills on the cap should be evenly arranged, beautiful, and dry.

Blanch the ingredients
Boil a pot of water and then add the soft tofu to blanch for about 3 – 5 minutes to help the tofu firm up and not fall apart when cutting.
Add a few slices of ginger to the pot of water used for blanching the tofu, and briefly blanch the crab meat in the ginger water. This helps eliminate the fishy smell of the crab meat and makes it firmer.

For dried shiitake mushrooms, you need to soak them in warm water for about 30 minutes until they expand before proceeding with preparation.
Cut off the mushroom stems as they are very tough and not tasty. Then cut the mushrooms into small pieces.
Tips for soaking dried shiitake mushrooms to soften quickly and remove sand
- Soak the shiitake mushrooms in water for at least 8 hours or overnight for even expansion.
- After soaking, rinse the mushrooms under clean running water several times to completely remove sand and dirt.

Cut the tofu into slices about 1 – 1.5cm thick. Use a spoon to scoop out some of the tofu’s interior.
Note- Keep some soft tofu to use for the sauce of the dish.
- Only create a small round hole in the tofu slice to hold the filling. Do not scoop too much or too deep as it will cause the tofu slice to break easily and also not be able to hold the filling.
Then roll the filling into small round balls so that they fit into the tofu pieces from which the interior has been scooped out. Do this until all the ingredients are used up.
Also, remember to set aside some crab meat for the sauce.

Steaming the tofu
Place a steamer on the stove and bring the water below to a boil. Once the water is boiling, add the shaped tofu into the pot to steam.
Steam the tofu for about 5 – 10 minutes until the filling is cooked. At this point, we take the tofu out and place it on a plate.
