Beef 300 gr Pickled cabbage 300 gr Onion 1 bulb Tomato 2 fruits Chili 1 fruit Garlic 10 gr Green onion 20 gr Cilantro 10 gr Seasoning powder 2 teaspoons Sugar 1 teaspoon Cooking oil 1.5 teaspoons Oyster sauce 1/2 tablespoon Soy sauce 1/2 tablespoon

  • Marinate the meat

    Marinate the beef with 2 teaspoons of seasoning, 1 teaspoon of sugar, 1.5 teaspoons of cooking oil, 1/2 tablespoon of oyster sauce, 1/2 tablespoon of soy sauce, mix well and marinate for about 15 – 20 minutes for the beef to absorb the seasoning.

  • Stir-fry the beef

    Place a pan on the stove, add cooking oil and wait for the oil to heat up, then add half of the minced garlic to sauté until fragrant.

    After the garlic is aromatic, add the beef to stir-fry over high heat until the meat is just rare and firm, about 70%, then add the tomatoes. Stir well until the tomatoes and beef are just cooked, then turn off the heat.

    Tips:

    • You should stir-fry the beef over high heat to prevent it from releasing water.
    • Do not stir-fry the meat for too long as it will make the meat tough, dry, and lose nutrients.

    After removing all the beef and tomatoes from the pan, add about 1/2 tablespoon of cooking oil to the pan.

    Add the remaining garlic and sauté until fragrant. Then add the pickled mustard greens and stir well. Season with: 1 teaspoon of seasoning powder, 1/2 tablespoon of fish sauce, and 1 teaspoon of sugar. Next, add the sliced onion and stir-fry until the ingredients are evenly coated with the seasoning.

    Finally, add the beef and tomatoes to the pan, and stir-fry for about 2 more minutes. Adjust the seasoning to taste, add the chopped green onions, stir briefly, and then turn off the heat.

    How to Choose Good Pork Belly

    • The good color of the meat is bright pink, not too red or too pale. If the pork has a pale color, is greenish, and has a foul smell, it is spoiled, and you should not choose this type of meat.
    • Pork with high firmness and elasticity is good meat. You can test by pressing your finger into the meat; if it rebounds immediately, is not slimy, and does not leak water or juice, it is fine.
    • You should choose pork belly or thigh that has both lean meat and fat so that your dish is not dry and not overwhelmed by too much fatty meat.

    • Prepare the Ingredients

      After purchasing the pork, scrub it clean with coarse salt, rinse it with water, and then place it in a basket to drain. Cut the meat into bite-sized pieces.

      Tip for Cleaning Pork Effectively, Without Odor

      • To completely eliminate the odor of pork, before cooking, briefly dip the piece of meat in boiling water for about 2 minutes, then take it out and rinse it with cold water.
      • Another useful tip is to add a little white wine to the boiling water when blanching the pork. The wine effectively neutralizes odors.

      Peel and finely chop the shallots.

      Cut the green onions into sections. Slice the chili peppers in half and cut into strips.

      Wash the pickled mustard greens with water to remove dirt and lessen the sourness.

      Place a pan on the stove, add cooking oil and wait for the oil to heat up, then add 1 tablespoon of sugar and cook until the sugar melts and turns a brown color.

      Then add the pork into the pan, stir-fry over high heat for about 5 – 7 minutes until the pork is just firm.

      Next, add the pickled mustard greens into the pan, season with 1 tablespoon of seasoning, 1 tablespoon of sugar, 1 tablespoon of fish sauce, and 2 tablespoons of water. Stir well and reduce the heat, stir-fry for about 10 – 15 minutes for the pickled greens and pork to absorb the seasonings evenly.

      When the stir-fry sauce thickens a bit, add chopped green onions and sliced chili into the pan and stir for another minute before turning off the heat, then serve on a plate.
