Stomach sausage 400 gr Pineapple 1/4 fruit (dứa/khóm) Onion 1/2 bulb Celery 2 stalks Cucumber 1 fruit Ginger 1/4 bulb Bell pepper 1 fruit Chili pepper 2 fruits Minced garlic 10 gr

How to prepare sweet and sour stir-fried stomach sausage

  • Marinate the stomach sausage

    After cleaning and briefly blanching the stomach sausage, cut it into bite-sized pieces.

    Add 1/2 teaspoon of sugar, 1/2 teaspoon of pepper, 1/2 teaspoon of seasoning powder, 1 teaspoon of minced chili, 1 tablespoon of minced onion and garlic, 2 tablespoons of vinegar, and 2/3 tablespoon of oyster sauce to the stomach sausage, then mix well and let the spices soak for 10 minutes.

    Note: Adding vinegar to the stomach sausage helps reduce the fishy smell, increases crunchiness, and adds sourness to the dish.

  • Slicing vegetables

    Chives are cut into small pieces, onions are sliced into wedges, and cucumbers are cut diagonally. Finally, chop the green onions.

    Heat a pan on the stove until the oil is hot, then add a few slices of ginger and minced garlic to sauté until fragrant. Next, add the pig intestines and stir-fry until just cooked, then add the remaining vegetables.

  • The corn should be bright yellow, not wilted, and maintain a certain crispness.
  • Select those that are intact, without insect bites or black spots.
  • It is best to purchase young corn from reputable sources with clear origin and packaging.

How to Choose Fresh Broccoli

  • Choose broccoli with a deep color and a round shape for good quality.
  • The stem of the broccoli should be firm, not soft and flexible. The surface of the broccoli should be thick and tight, without many gaps.
  • Avoid buying broccoli that is yellowing, bruised, or has insect bites.

  • Prepare and boil the pig intestines

    Wash the pig intestines, put them in a pot of boiling water with 1 teaspoon of salt, a few slices of ginger, and 1 tablespoon of white wine for 15 minutes.

    Then, take the pig intestines out and put them in a bowl of diluted lemon water to cool down, then cut into bite-sized pieces.

    Cut young corn and broccoli into bite-sized pieces, soak them in diluted salt water for about 10 minutes, then rinse thoroughly with water.

  • Good hog casings have a round, firm casing, pinkish-white color, and the liquid inside is milky white.
  • Do not buy hog casings that are soft, dark in color, or slimy.
  • Avoid sections of intestines that are large in diameter, flat, with a yellowish liquid inside.

How to properly clean hog casings

  • Wash the hog casings in water, remove all the fatty membranes, turn them inside out and then rinse directly under running water.
  • Blanch the hog casings with a little salt, a few slices of fresh ginger, and a bit of white wine for about 3 – 5 minutes.
  • After that, soak the hog casings in a bowl of cold water with a bit of alum (or vinegar) and then rinse thoroughly with water several times.

Some notes when using dishes made from hog casings

  • Hog casings contain saturated fats and high cholesterol, which can increase harmful blood fats affecting cardiovascular health if consumed excessively, especially for obese individuals, those with diabetes, high blood pressure, gout, etc.
  • Do not eat hog casings when they are not cooked or undercooked, as it can easily lead to bacterial infection, and do not keep hog casings overnight.
