Sauté carrots and fry eggs
Place a pan on the stove, add a little sesame oil, 1 shredded carrot, and a pinch of salt, stir-fry evenly for about 1 – 2 minutes until tender, then transfer to a plate.
Add a little vegetable oil, beat the eggs in a bowl and pour into the pan, add a pinch of salt and pepper. Fry the eggs until cooked, then flip to cook the other side. When the eggs are evenly cooked on both sides, turn off the heat and transfer to a plate.

Mixing rice
The freshly cooked and still hot rice is placed in a large bowl. Add a little sesame oil, a little olive oil, and a little salt, then mix well to let the rice absorb the seasoning.

Use a spoon to spread the rice evenly, then add a layer of all the ingredients including shredded perilla leaves, a row of tuna, a row of shredded carrots, 1 – 2 strips of egg, 1 crab stick, and 1 strip of pickled radish in the middle of the rice.
Slowly roll the bamboo mat while continuously pressing firmly so that the filling sticks to the rice.
Rub a little sesame oil on the roll to enhance flavor and shine. Cut the roll into smaller pieces for easier enjoyment.
Tip: If the seaweed does not stick to the rice while rolling, dip your fingers in water and rub the seaweed, then roll slowly so they can stick together.

- Good beef is bright red, with fresh yellow fat, white tendons, and is slightly firm when pressed.
- You should choose tender, small cuts of meat that are not too smooth. Press with your hand; if it has good elasticity, does not stick to your hand, and has no unpleasant smell, it is fresh meat.
- You can choose to buy pre-ground meat or buy meat to grind at home.

Mix the green pepper mixture
Place a pot on the stove, add a mixture of 100g chopped spicy peppers, 20g minced garlic, 1 tablespoon of anchovy sauce, and 1 teaspoon of plum syrup, then cook for 2 – 3 minutes until boiling, then remove from heat and let cool.

Stir-fried beef
Place a pan on the stove, add 2 tablespoons of cooking oil, 250g of minced beef, and 1 tablespoon of soy sauce, then stir-fry evenly for 3 – 5 minutes until the meat is slightly cooked.
Next, add 20g of finely chopped carrots and stir-fry the mixture for another 2 – 3 minutes until it is evenly cooked, then turn off the heat and let it cool.
