  • Color: you should choose fruits that are bright yellow from the stem to the bottom, there may be a few eyes that are slightly green but it still has a certain sweetness.
  • Shape: Pineapples that are round and short will have more flesh than those that are long.
  • Pineapple eyes: Choose fruits with large, sparse eyes as this indicates that the pineapple is mature and naturally ripened without chemicals.
  • Fragrance: you can try smelling the end of the fruit; if it has a fragrant smell, you should buy it. Additionally, avoid fruits that have a slightly sour smell like fermentation, as those pineapples are overripe.

How to make Lemongrass Steamed Beef

  • Prepare and Boil the Beef

    Put the beef into a bowl, add a little salt, then use your hands to rub the salt all over the beef to clean the dirt stuck on it.

    After that, wash the beef with water 3 times. Remove the washed beef and place it in a colander to drain, then use a knife to remove the outer layer of fat from the beef.

    Wash the lemongrass with water to remove any dirt stuck on it.

    Next, place a pot of water on the stove, cut 3 stalks of lemongrass into small pieces and boil. When the water is boiling, add the beef and 1 tablespoon of seasoning, and boil for 30 minutes. After 30 minutes, remove the beef and let it cool.

    The vegetables you bought should be picked, washed clean with water.

    Next, take the remaining lemongrass, cut the white root part into small pieces, leaving the green stalk part on top.

    Take 2 chili peppers, wash them clean, and then cut them into small pieces. Next, peel 2 cloves of garlic and then slice them thinly.

    Add the chopped pineapple into a blender and blend until smooth, without adding water. When the pineapple starts to become smooth, add the prepped garlic and blend until smooth.

    Once the mixture is smooth, transfer it to a bowl, then add 2 teaspoons of sugar, 1 teaspoon of monosodium glutamate, and stir well. Next, add 3 tablespoons of fish sauce and stir well.

  • Steaming beef

    The beef has cooled down, slice it thinly to your liking and place it in a large bowl.

    Add 1/2 of the lemongrass and all the chopped chili into the bowl, add 1 teaspoon of seasoning, and mix well to let the beef absorb the spices.

    Tear the lemongrass stalks into thin strips with your hands and lay them at the bottom of the plate, then place the marinated beef on top.

    Finally, add the remaining chopped lemongrass on top of the beef and steam in a boiling pot for 5 minutes to complete.

How to prepare Lemongrass Steamed Beef

  • Extract the pandan leaf juice

    After buying pandan leaves, remove the roots, wash them clean, and chop finely. Remember to save a few leaves to line the bottom when steaming! Then put them into the blender with 100ml of water and blend until smooth.

    Once the mixture is smooth, strain it to extract the juice using a clean cloth or a sieve.

    Tip:

    • To achieve a beautiful pandan leaf color and reduce bitterness, soak them in warm water for about 5 – 10 minutes before blending.
    • If you don’t have a blender, you can pound the pandan leaves until they are crushed, mix with water, and then strain them.

    Place the beef in a bowl, add a little salt, then use your hands to rub the salt all over the beef to clean off any dirt. After that, rinse the beef with water 2 – 3 times and let it drain.

    Next, put the beef in a bowl and add 15g of minced lemongrass, 10g of minced garlic, 10g of shallots, 3g of salt, 2g of ground pepper, 10g of sugar, 10ml of sesame oil, 10ml of oyster sauce, and 50ml of pandan leaf water.

    Use your hands to evenly rub the mixture over the meat and marinate for 6 hours or overnight.

  • Steaming the Beef

    Place a steamer pot on the stove, add water, and bring it to a boil.

    Next, take a deep plate, lay a layer of pandan leaves at the bottom, then place the marinated beef on top, sprinkling 50g of chopped lemongrass over the meat.

    Then place the beef plate into the pot, cover it, and steam for 2 hours. After 2 hours, you can use a toothpick to poke into the beef; if there is no red blood on the toothpick, the beef is cooked.

    Finally, use a knife to slice the beef into thin pieces and serve on a plate, and the beef dish is complete.

    You put 10 grams of chili, 10 grams of garlic, 10 grams of coriander, and 30 grams of sugar into a mortar, and then pound until the ingredients are crushed and the sugar dissolves a bit.
