Wash the lemongrass and cut off the leaves, then crush the bulb. After crushing the lemongrass, cut it into short pieces about 2 finger lengths.
Use 1 tablespoon of coarse salt to rub all over the duck, then wash it clean with water. Next, slice some ginger and crush it, mix it with rice wine, and massage it all over the duck to remove dirt and the duck’s odor.
Finally, rinse the duck with water and let it drain.
Add 1/2 teaspoon of pepper, 1/2 teaspoon of seasoning powder, 1 tablespoon of soy sauce, and a little lime leaves, then massage well so that the spices absorb evenly inside and outside the duck.
Then place the lemongrass and lime leaves inside the duck’s belly and marinate for about 15 minutes before steaming.

After marinating the duck for 15 minutes, place it in a steamer, sprinkle 1 teaspoon of pepper on top, and steam it for 30 minutes until the duck meat is cooked and tender.
To check if the duck is fully cooked, use chopsticks to pierce the meat; if it goes in easily and no red blood flows out, the duck is done.
Finally, turn off the heat, chop the duck into bite-sized pieces, and arrange it on a plate.

First, make a mixture of 1 tablespoon of salt and 1 squeezed lemon, then rub it all over the duck to eliminate the duck’s odor and rinse it with water until clean.
Next, you remove some of the duck’s rib bones.
Then, add seasoning including 1/2 teaspoon of salt and 1/2 teaspoon of seasoning powder sprinkled over the duck and massage it until the seasoning dissolves and absorbs into the duck.
Marinate the duck for 15 – 20 minutes.

Steam the duck
Prepare a steamer, line a layer of aluminum foil on top of the steamer, then place the marinated duck on top.
Next, use another layer of aluminum foil to cover and wrap the duck tightly.
Then boil a pot of water and steam the duck for 20 minutes.
Once the duck is cooked, turn off the heat, remove the aluminum foil, and transfer the duck to a plate to cool.
