Ingredients for Stir-fried Clams Serves 2

Whole clams 300 gr Chopped lemongrass 10 gr Shrimp paste 1 teaspoon Minced garlic 1 tablespoon Minced lemongrass 2 tablespoons Chili powder 1/2 teaspoon Chili 3 pieces (2 sliced/1 minced) Cooking oil 2 tablespoons Common seasoning a little (salt/ground pepper/seasoning powder)

How to Cook Stir-fried Clams

  • Prepare the clams

    Wash the clams with water, then soak the clams for 30 minutes in water mixed with 2 teaspoons of salt and 2 sliced chilies.

    Next, take the clams out, rinse them with cold water, and drain.

    Heat the pan, add 2 tablespoons of cooking oil, 1 tablespoon of minced garlic, 2 tablespoons of minced lemongrass, and sauté until fragrant.

    Next, add 1 teaspoon of shrimp paste and stir well, then add the clams, seasoning the pan with 1 teaspoon of seasoning powder, 1/2 teaspoon of chili powder, add 1 chopped chili, and cut lemongrass into pieces, stir well to dissolve the spices. At this point, add 50ml of water, stir well, and cover the pan. Boil the water for about 3 minutes until all the clams open, indicating they are cooked.

    Take the stir-fried clams out onto a plate, sprinkle with 1/2 teaspoon of ground pepper to finish.
