How to Cook Sweet and Sour Shrimp

  • Prepare the Ingredients

    After buying the shrimp, clean the shrimp heads; you can also cut off the heads, trim the legs, remove the intestines, keep the shells, and rinse well.

    Peel and slice the shallots and garlic.

    In a pan or clay pot, add 2 tablespoons of annatto oil, 1 tablespoon of sugar, and heat until the sugar dissolves. You should stir continuously while heating to ensure the sugar melts completely.

  • Fresh shrimp usually have their tails curled together; if the shrimp’s tail is spread out, it means the shrimp has been injected with chemicals or water to make it plump.
  • Fresh shrimp usually have their legs tightly attached to the body; if you see the legs turning black or not sticking tightly to the body, do not buy them because the shrimp are no longer fresh.
