How to choose good fresh peaches

  • The size of a good peach should be about the size of a teacup, round and have a diameter of 3 – 5cm, and ripe peaches are yellow and deep red in color.
  • When held, it should feel firm, and pressing lightly on the fruit should not yield to softness.
  • When tasted, a good peach when raw is crunchy, juicy, with a slight sweet and sour taste. For ripe peaches, the flesh will be yellow, smooth, and the sweet and sour flavor will be more pronounced.

How to make Peach Jelly Tea

  • Preparing fresh peaches

    First, wash the peaches with water to remove any dirt on the skin.

    Next, dilute 1.5 liters of water with 1 tablespoon of salt. Then, cut each peach into wedges and soak them in the saltwater.

    After that, peel the peaches and continue soaking the flesh in saltwater to prevent browning. Finally, rinse the peaches with clean water and let them drain.

    Quick and simple ways to prepare peaches

    • Method 1: Use a knife to cut the peach in half vertically from the stem, then use your hands to pull apart and remove the pit inside.
    • Method 2: Use a knife to cut the peach in half as in method 1, then continue to cut into 8 equal wedges. After that, cut across the middle of the peach and use your hands to pull apart the peach sections.
    • Method 3: Use a knife to cut the flesh of the peach close to the pit, and continue doing this until all the fruit is done.

  • Make syrup-soaked peaches

    Place a pot on the stove, add 400g of sugar and 200ml of water, and heat the mixture over medium heat until the sugar dissolves and turns a brown color.

    Tip: Do not boil the sugar mixture for too long as it will cause the syrup to burn and become bitter.

    Next, add 800ml of water and bring the syrup mixture back to a boil. When boiling, add the peach flesh and cook until the fruit turns translucent.

    Then, remove the peaches and soak them in a bowl of ice water for about 15 minutes to cool.

    When the syrup is cool, add the juice of 1/2 lemon. Finally, place the peaches along with the syrup into a glass jar and refrigerate in the refrigerator for 1 – 2 days.

    Tip: When placing in the glass jar, you will have about 300ml of syrup left. Remember to keep this syrup to make the peach jelly!

  • Cook peach jelly

    Add 300ml of cooked syrup and 5 soaked peach slices into the blender and blend until smooth.

    Put a pot on the stove, add the blended peach mixture, 300ml of water, and cook over medium heat until it boils.

    When the water boils, add 5g of agar powder and stir well over low heat until the mixture boils again.

    Next, pour the peach mixture into a mold and let it cool, then place it in the refrigerator until the peach jelly is completely set.

  • Brew tea and cut the peach jelly

    Add a tea bag into a cup, pour in 100ml of boiling water, and let it steep for 5 minutes.

    Then, cut the peach jelly into small square pieces.

    Fill the glass with ice, then add about 3 tablespoons of peach soaking water and brewed tea. Finally, place 3 slices of fresh peach and a little peach jelly on top to finish.
