Abalone 400 gr (prepared) Chinese sausage 20 gr Shiitake mushrooms 8 pieces (dried) Chicken broth 1 liter Bok choy 150 gr Abalone sauce 2 tablespoons Oyster sauce 1 tablespoon Soy sauce 1/3 teaspoon Common spices a little (salt/seasoning sugar) Cornstarch 10 gr

How to choose delicious shiitake mushrooms

For dried mushrooms

  • Choose firm ones that are not broken, bright in color, and free of white mold spots. Choose a reputable source to buy dried mushrooms to ensure safety.
  • Avoid buying dried shiitake mushrooms of unknown origin and those with an unpleasant odor.

For fresh mushrooms

  • Choose those with bright colors, a characteristic aroma, and avoid mushrooms that are bruised or have a rotten smell. If the cut oozes a milky substance, it is a sign of toxic mushrooms. Avoid mushrooms with dark spots or wrinkles on the cap, and do not choose slimy mushrooms. Fresh mushrooms will have a thin, paper-like layer on them.
  • Select mushrooms with a sturdy stem, uniform color; if the mushrooms have opened, the gills must form an even, beautiful, and dry chain.
  • When choosing fresh fragrant mushrooms, select those with moderate-sized caps, tightly closed, and slightly yellow-brown in color. If you see dark brown mushrooms, do not buy them, as they may be toxic mushrooms.

  • Prepare the abalone

    After purchasing the abalone, rinse it thoroughly with clean water several times. Then, use a dry towel to wipe off the water and place it in a separate bowl.

    Add chicken broth to a pot, then add lap xuong, oyster sauce, and soy sauce and stir well. Bring the mixture to a gentle boil on the stove for about 3 – 5 minutes.

    Boil a little water in a pot, then add bok choy, add a little salt and proceed to boil for about 3 – 5 minutes.

  • Choose fresh, green bunches of spinach with the roots intact.
  • The stems and leaves should not be broken, bruised, or spoiled.
  • The leaves should be bright green, not too dark, indicating that the spinach is still young and contains many nutrients.

    Trim the base of the spinach, then wash it thoroughly with cold water, cut into 5 – 6cm pieces, and place it in a basket to drain.
