How to choose fresh balut
- Good balut usually has a little residue on the shell and feels heavy when held.
- You can also test by shining a light through it. If the tip of the egg does not have too much space and the yolk is full, then it is a good egg.
- Avoid buying eggs that are too light, have moldy shells, and make noise when shaken as those are spoiled eggs.
How to choose fresh and delicious peanuts
- Choose large, round nuts with a bright-colored outer shell. They should feel firm when pressed.
- The nuts should be uniform, not mixed with shriveled, rotten, or infested ones.
- Do not buy peanuts that have unusual smells or strange signs on the nut’s surface.

How to prepare fertilized duck eggs stir-fried with tamarind

Prepare the ingredients
Boil 5 fertilized duck eggs for 20 minutes over high heat. Then transfer the eggs to cold water, peel them, and separate the eggs from the liquid.
Heat a pan with 1 teaspoon of salt and roast the peanuts over low heat for about 5-7 minutes until the skin cracks and a fragrant aroma is released, then turn off the heat. Let the peanuts cool and then remove the skin.
Wash the Vietnamese coriander and let it drain, chop half and leave the other half whole. Peel and finely chop the garlic. Wash the chili and slice it.

Make the tamarind sauce
Put tamarind in a bowl with 150ml of boiling water, mash the tamarind, then strain it through a sieve to get the juice.
Add the quail egg water, 3 tablespoons of sugar, 3 tablespoons of fish sauce, and 1/3 teaspoon of salt to the tamarind juice, then stir well to dissolve the seasoning.

Cook the tamarind sauce
Heat a pan on the stove, add 2 tablespoons of cooking oil and sauté the minced garlic until fragrant. Once the garlic is fragrant, add the tamarind sauce and stir-fry on high heat for about 3 minutes, then add the sliced chili. Adjust the seasoning to your taste and stir-fry for about 2 more minutes.

Stir-fried duck eggs with tamarind
Add the fertilized duck eggs to the sauce pan and stir-fry, drizzle the sauce evenly over the eggs to absorb the seasoning. Cook on medium heat for 10 minutes until the sauce coats the eggs and thickens.
Finally, add finely chopped Vietnamese coriander and turn off the heat. Serve the stir-fried duck eggs with tamarind on a plate, garnish with Vietnamese coriander, and sprinkle with roasted peanuts to enjoy.
