How to prepare American-style Red Bean Rice

  • Prepare the ingredients

    Sausage should be cut into small, bite-sized pieces. Peel the onion and dice it. Wash the bell pepper, remove the stem, and dice it. Wash the celery, drain it, and then cut it into small pieces like dice. Wash the green onions, trim the roots, and chop them finely.

    Wash the red beans and soak them for about 4 hours, or you can soak them overnight.

  • Fry the sausage

    Place a pot on the stove, add 2 spoons of cooking oil, wait for the oil to heat up, then add 400g of sliced sausage, stirring continuously over medium heat for about 5 – 6 minutes.

    Fry until the sausage is golden and crispy on both sides, then remove it to a bowl.

    You reuse the pot of oil that just fried the sausages, add 1 onion, 1 bell pepper, and 3 chopped celery stalks into the pan and stir-fry over medium heat for about 2 minutes.

    Then add 4 teaspoons of minced garlic, 2 teaspoons of chili powder, 1 teaspoon of spicy Vietnamese mint, 1 teaspoon of thyme, 1/2 teaspoon of onion powder, 1/2 teaspoon of garlic powder, 1/4 teaspoon of cayenne pepper, and 1/4 teaspoon of ground black pepper into the pot. Then mix well over medium heat for 2 minutes.

  • Simmer the beans

    Next, add 450g of soaked red beans into the pot, then add 1.5 liters of filtered water and 2 bay leaves and cook over high heat until the water boils, then reduce to medium heat and simmer for 1 hour.

    Then, you take the cooked beans out and mash them finely, then put them back into the pot to simmer on low heat for another 30 minutes.

    After that, you add the fried sausage into the pot and cook for another 10 minutes on low heat.

    Finally, you put about 1 bowl of white rice into a bowl, then pour the red bean mixture you just cooked over the white rice, sprinkle a little green onion on top, and you can enjoy it right away.

    Wash 60gr of red beans and place them in a pot, add 1 liter of water to the pot, then place the pot on the stove, boil over high heat for 10 minutes, then reduce to low heat and cook for another 50 minutes.

    After that, remove the beans and set them aside, keeping the water separate.

    Next, put the beans back into the pot, add 840ml of water, place the pot on the stove, and cook over medium heat. When the water boils, reduce the heat and simmer the beans for about 25 – 30 minutes.

    Put 450g of rice into a basin, rinse it with water about 3 – 4 times, then let it drain.

    Add the prepared rice into the rice cooker, then pour in all the bean cooking water, and add filtered water to make a total of 540ml of water.

    Next, add the simmered red beans into the pot, and add 1/2 teaspoon of salt to the pot, without needing to mix the mixture.

    Then close the lid and press the cook button. After the rice is cooked, keep the lid closed for about 10 – 15 minutes.
