  • Prepare the Ingredients

    You soak the oyster mushrooms in diluted saltwater for 15 minutes, then take them out, rinse with clean water, squeeze dry, and let them drain. After that, you cut the mushrooms into bite-sized pieces.

    Wash the lemongrass, cut it into several pieces about the length of a finger, and then crush it with a pestle.

    Tip: To make the soup fragrant and flavorful, you should crush the lemongrass with a pestle to help release the essential oils more easily!

How to choose good bitter gourd

  • You should choose bitter gourds with fresh green stems, dark green skin, shiny and few black spots. These gourds are usually firm, crispy, and sweet.
  • Avoid choosing overly young or old gourds, as young gourds will not be fragrant and sweet like medium ones, while older or slightly overripe ones tend to be fibrous and tough.
  • You should avoid gourds that are wilted, as well as those with soft and yellowing stems.

  • When selecting shrimp, you should choose fresh shrimp with a transparent shell that still has a slight smell of seawater, not fishy. Avoid shrimp that have dark patches or inconsistent colors.

    Peel the bitter gourd, wash it clean, drain, and cut it into bite-sized pieces.

    Cut off the stems of the oyster mushrooms, halve them, soak in diluted salt water for 10 minutes, then rinse with clean water 2-3 times, squeeze out the water, and let them drain.

  • Prepare the shrimp

    You remove the shrimp head, peel the shell, take out the black vein on the back of the shrimp, then rinse thoroughly 2 – 3 times and let it drain.

    Quick way to remove shrimp vein:

    • You count backwards from the tail of the shrimp to the second groove connecting the two shell segments, pierce a toothpick through this position and gently pull the black vein to pull it out.
    • You don’t need to use a knife to cut the back of the shrimp; you can also use a toothpick to gently pry out the front part of the shrimp body to see the black vein. Use your hands to gently pull this black vein out, and the shrimp is clean.

  • Sauté shrimp and mushrooms

    You add 300ml of water to the mushrooms and shrimp, then cover it and cook until the water boils again, then add the gourd and cook until soft.
