How to choose delicious quail eggs

Choose quail eggs with beautiful, sturdy shells, no gray color, and without any spots.

When shining a light or looking through sunlight, hold the egg in your hand, exposing only the two ends of the egg, looking at the egg from one side while shining a light from the other side. If it is a fresh egg, it will have a transparent pink color with a pink dot in the middle.

  • Prepare the pork bones

    Clean the pork ribs and cut them into pieces about 4cm long.

    Boil a pot of water with a tablespoon of salt, then add the pork ribs. When the water boils again, continue boiling for 5 minutes, then turn off the heat.

    Remove the bones and rinse them with cold water.

    Green onions washed and cut into sections.

    Carrots washed and cut into sections.

    1 onion peeled, left whole, and 1 onion diced finely.

    Quail eggs boiled, peeled.

    Mix minced meat with 1 diced onion, 10g minced shallots, 1 tablespoon seasoning powder, and 1 teaspoon pepper. After mixing, shape the meat into bite-sized balls and set aside.

    To peel quail eggs quickly, boil the eggs in a medium-sized pot. Right after boiling, pour out all the hot water, fill the pot with cold water just covering the eggs, cover the pot, and shake it up and down about 10 times.

    At this point, the egg shells will be cracked all over, making peeling very quick.

    Put into a pressure cooker the following ingredients: 1.5kg of pre-prepared pork bones, 1kg of chopped carrots, 1 onion, 25g of salt, 35g of chicken seasoning, 21g of sugar, 2 cans of chicken broth, and 2.5 liters of water. Stir the ingredients well, then cover the pot and set it to soup mode for 5 minutes. After 5 minutes, let it rest for another 30 minutes.

    After that, open the pot, remove the fat, and the onion, set the cooking mode back on, then add the meatballs and quail eggs, and boil for another 15 minutes. Finally, add the chopped green onions and stir well, and it’s done.

    Note: If you do not have an electric pressure cooker, simmer the bones over low heat for about 45 minutes using a regular pot.

  • Boiling Noodles

    Boil a pot of water, then add 500g of noodles, 1 teaspoon of salt, and 1 tablespoon of cooking oil, stirring well. Once the water comes back to a boil, cook for another 4 minutes, then turn off the heat, cover the pot, and let the noodles steam for another 5 minutes.

    Next, drain the noodles and rinse them with cold water, then let them dry.

    Take a sufficient amount of noodles into a bowl, scoop in some broth, pork ribs, carrots, meatballs, quail eggs, sprinkle with a little fried shallots, cilantro, and ground pepper to enjoy.

How to make Pork Rib Noodles with Char Siu Meat

  • Prepare the Pork Ribs

    Wash the pork ribs clean and cut them into bite-sized pieces.

    Put the ribs in a bowl with 1 tablespoon of salt, mix well, then pour boiling water over them and massage the ribs to remove all the impurities. Next, take the ribs out and rinse them thoroughly with cold water.

    Add the pork ribs to a pot with 2 liters of water, bring to a boil, then reduce to a low heat, adding 1 teaspoon of salt, 2 teaspoons of seasoning, and 1/2 tablespoon of rock sugar. Simmer the ribs for about 30 minutes.

    After 30 minutes, add the carrots to the pot and cook for another 10 minutes. Adjust the seasoning to taste.

    Note: Do not cover the pot while simmering the bones, keep the heat low, and regularly skim off the foam to keep the broth clear.

    Place a pot of water on the stove, add 1 teaspoon of salt, 1 teaspoon of cooking oil, and bring to a boil. Add the noodles and boil for 7 – 9 minutes until the noodles are soft.

    Turn off the heat, remove the noodles and rinse them with clean water, then drain.
