How to cook Nui with pork ribs

  • Prepare and simmer the bones

    To clean the blood vessels and reduce the odor, you should rinse the bones you purchased in boiling water several times, then rinse again with clean water and let them drain.

    Next, you place a pot on the stove, add 4 liters of purified water, put the bones into the pot along with 4 sliced shallots, 2 tablespoons of seasoning powder, 2 tablespoons of seasoning granules, 1 tablespoon of sugar, and cook over medium heat.

    To keep the broth clear, remember to skim off the foam when the water boils, then reduce the heat and cover to simmer the bones for about 50 – 60 minutes.

    Method 1: To effectively eliminate the smell of pork, after chopping the bones, use a little vinegar mixed with a bit of ginger that has been crushed, then rub it onto the bone pieces for about 5 minutes, and rinse again with water.

    Method 2: Another way to clean and remove the odor from pork bones is to soak them in rice washing water for about 15 – 20 minutes, then rinse with water.

  • Prepare other ingredients

    Carrots should be peeled, washed, and then cut into bite-sized pieces.

    Green onions should have the roots removed, any wilted or yellow leaves discarded, and then washed thoroughly. Cut the green onion tops into sections, and chop the leaves finely.

    Dry noodles should be boiled for about 8 – 12 minutes over medium heat; to prevent the noodles from sticking to the bottom of the pot, occasionally stir them with chopsticks!

  • Cooking noodle broth

    When the bones have been simmering for 30 minutes, add the carrots and season with 1 tablespoon of seasoning powder, 1/2 tablespoon of salt, 1 tablespoon of broth seasoning, 1.5 tablespoons of sugar, and 2 teaspoons of monosodium glutamate.

    After simmering the bones for 50 – 60 minutes, shape the meatballs (raw sausage) into bite-sized pieces and add them to the pot. Cook for another 10 – 15 minutes for the meatballs to cook through, and adjust the seasoning of the broth to taste.

    Add the noodles and a bit of chopped scallions into a bowl, scoop in the bones, meatballs, carrots, and broth. Sprinkle with a little pepper and fried shallots, then enjoy.
