  • Prepare the shrimp

    Clean the shrimp, cut off the antennae and legs, remove the black vein, then rinse and drain.

    Slice the lemongrass and chop it finely or blend it in a blender.

  • Marinate shrimp

    Put the shrimp in a bowl, add lemongrass, 2 tablespoons of satay, 1 teaspoon of seasoning, 1/2 teaspoon of sugar, wear plastic gloves, mix well and marinate for 20 minutes for the shrimp to absorb the spices.

  • Grill shrimp

    Arrange the shrimp in a tray, put it in the air fryer and grill for 10 minutes at a temperature of 160 degrees Celsius.

    Tip: If you prefer straight shrimp, you can skewer the shrimp on skewers.

    After the time is up, take the tray out, flip the shrimp, and put it back in to grill for another 5 minutes at a temperature of 160 degrees Celsius.

  • Prepare the shrimp

    Clean the shrimp, cut off the antennae and legs, remove the black vein, then rinse and drain.

    You place a pan on the stove over medium heat, add 1 tablespoon of cooking oil, wait for it to heat up, then sauté 1 minced shallot, 1 minced garlic clove, 1 small dried chili pepper chopped, and 5g of chopped turmeric.

    Next, add 15ml of water, 1 teaspoon of salt, 1 teaspoon of seasoning powder, 1 teaspoon of sugar, 1 teaspoon of chili sauce, and 1 teaspoon of fish sauce, stir well to dissolve the seasonings, then turn off the heat, wait for it to cool and blend in a blender until smooth.

    Add the shrimp to a bowl, pour in the sauce, mix well, and marinate for 15 minutes to absorb the flavors.

  • Grill the shrimp

    You skewer the shrimp onto skewers and arrange them on a tray, place in the air fryer and grill for 10 minutes at 160 degrees Celsius.

    When the time is up, take the tray out, brush another layer of marinade sauce, and put it back in to grill for an additional 3 minutes at 180 degrees Celsius.

How to make garlic butter shrimp using an air fryer

  • Prepare the shrimp

    Soak the shrimp in diluted saltwater for about 10 minutes, then clean, cut off the antennae and legs, remove the black vein, then rinse thoroughly and let it dry.

    Using a knife, without cutting it off, slice the back of the shrimp in half and the joint between the head and the back, then use your hands to separate the flesh.

  • Grill the shrimp

    Heat the unsalted butter using a double boiler or microwave to melt the butter.

    Place the shrimp on a tray, add melted butter on top of the shrimp (keep 5ml of melted butter), and put it in the air fryer to grill for 10 minutes at 180 degrees Celsius.

  • Make garlic butter sauce

    You place a pan on the stove over medium heat, add 1 tablespoon of cooking oil and wait for it to heat up, then add chopped green onions to sauté until fragrant, stir well and turn off the heat immediately to keep the green color of the onions. You transfer the onions to a bowl.

    Still using the pan with the onions, add 1 tablespoon of cooking oil and then add garlic to sauté until fragrant, add 1/2 tablespoon of soy sauce, 1/2 tablespoon of seasoning powder, 2 teaspoons of sugar, and 5ml of butter. Stir well and then turn off the heat.

How to choose fresh and delicious shrimp

  • Shrimp shell: Choose shrimp with a transparent outer shell that has a characteristic seafood smell, not a rotten smell, and no dark spots or uneven colors. The outer shell of the shrimp should be dry, not slimy.
  • Shrimp shape: Fresh shrimp will have a straight body, while shrimp that have been stored for a long time will be bent. The shrimp body should be firm, not mushy.
  • Shrimp head, tail, legs: Fresh shrimp will have the head, legs, and tail firmly attached to the body, with the tail neatly folded. If the shrimp’s tail is spread out, it may have been injected with additives. Do not choose shrimp with heads, legs, or tails that have turned black, as these are old and not fresh.

How to quickly remove the shrimp’s back vein

  • Method 1: Peel the head and body shell of the shrimp from the legs to the tail, using two fingers to hold the last segment tightly and then pull it out. Next, use a knife to score the back of the shrimp to expose the black vein, then use a toothpick to remove it.
  • Method 2: After washing the shrimp, insert a toothpick into the middle of the shrimp’s neck and pull out the black vein, discarding it.
  • Method 3: Wash the shrimp clean and use scissors to cut along the shell to reveal the black vein, then rinse under running water until clean.

Notes when grilling shrimp using an air fryer

  • Preheat the air fryer for 3 minutes at a temperature of 100 to 150 degrees Celsius before cooking to stabilize the temperature inside the fryer, allowing for more even cooking.
  • Choose food that is appropriately sized for the frying basket, and especially ensure that the shrimp is completely dry before frying to protect the lifespan and prevent extended cooking times.
  • Depending on the quantity of shrimp, whether they are thin or thick, you can adjust the temperature and cooking time accordingly for the air fryer. You can refer to the suggested time and temperature provided on the air fryer or the accompanying instruction manual for first-time use.
