How to Cook Fried Tuna with Fish Sauce

  • Prepare the Tuna

    Wash the tuna thoroughly, then rub it with salt and rinse with clean water, let it drain. Use a paper towel to dry.

    You use 1 tablespoon of flour, sprinkle it evenly on both sides of the fish slice.

    You heat a pan over medium heat, wait for the pan to get hot, add 2 tablespoons of oil, then place the fish in to fry. Fry until one side of the fish is golden before flipping it to fry the other side. Then, you transfer the fish to a plate to drain the oil.

  • Making Fried Tuna with Fish Sauce

    You add 1 tablespoon of vegetable oil to the pan, heat the oil, then add chopped green onion and minced garlic to sauté until fragrant.

    Next, add sliced chili, 1 teaspoon of monosodium glutamate, 2 tablespoons of sugar, 1/2 teaspoon of ground pepper, 3 tablespoons of fish sauce, and 1 tablespoon of chili sauce, stir well.

    Then, you add the fried fish and cook on low heat until the sauce thickens and the fish absorbs the seasoning, then turn off the heat.

  • Prepare the tuna

How to choose fresh and delicious tuna

  • To make the dish more attractive, you should choose fresh tuna and limit the use of frozen tuna.
  • Preferably choose ocean tuna because ocean tuna has more fragrant and firmer meat, containing many nutritional values.

How to choose fresh tuna

  • Choose fish with shiny and clear eyes, clearly seeing the iris inside. If the fish’s eyes are sunken, it indicates that the fish has been frozen for a long time and transported a lot, the meat will no longer be fresh.
  • Check the gills; if the fish is fresh, the gills will be bright red, while spoiled fish will have dark red or even brownish-black gills.
  • Use your hand to press on the skin (especially the belly) of the fish; if the skin has good elasticity and does not sink in, it is fresh fish.
  • The method of choosing tuna with fresh, red, or non-red meat is by pricking with a needle. The redder and firmer the fish meat, the better; the clearer the fish meat, the lower the quality. When pricking the fish, take a sample of the meat and rub it on your palm; if you see a lot of water flowing and the meat is soft and flaky, then this fish will not taste good.

How to choose frozen tuna

  • When buying frozen tuna, you need to check the expiration date; frozen sea fish should only be used within 1 month from the date of catch for the best quality.
  • Check if the packaging is torn or opened anywhere and observe the fish inside. You should not choose pieces of fish with a thick layer of ice because they may have been stored for too long or have been thawed and refrozen again.
