How to choose good pork belly

  • The fat and lean parts are harmoniously combined, with neither too much nor too little of each. This will prevent the meat from being greasy due to too much fat or dry due to too little fat.
  • The surface of the meat is smooth, not too greasy, and the meat should have good elasticity, with a certain stretch between the meat fibers.
  • Good pork belly will have a bright red color and a moderately bright hue. If it is too dark, the meat is old or has been stored for too long. If the color is too deep, the meat has been treated with chemicals.

How to Prepare Fried Pork with Lemongrass

  • Prepare and Marinate the Meat

    First, wash the lemongrass and chop it finely.

    Wash the pork with a little diluted salt water, you can gently squeeze the meat with your hands to make it cleaner.

    After washing, place the meat in a basket to drain. When the meat is drained, put it on a clean cutting board and cut it into small bite-sized pieces.

    Marinate the meat with the chopped lemongrass, add 1 tablespoon of fish sauce, 1 tablespoon of sugar, 1/2 tablespoon of seasoning, and 1/2 teaspoon of chili powder. Then use chopsticks to mix well and wait for about 20 – 25 minutes for the meat to absorb the spices.

  • Fry the Meat

    Add 3 tablespoons of cooking oil to the pan and heat it up, when the oil is hot, add the lemongrass to sauté until fragrant.

    Once the lemongrass is fragrant, add the meat to the pan to fry. First, you should fry the meat on low heat to ensure it cooks evenly. When the meat starts to firm up, increase the heat and fry until you see the edges of the meat are browned, indicating it is cooked.

    Note:

    You should cover the lid to prevent hot oil from splattering out while frying.

    Put into a bowl 2 tablespoons of fish sauce, 1.5 tablespoons of sugar, and 1/2 tablespoon of vinegar, add 1/2 tablespoon of chili sauce, then use a spoon to stir well until the mixture dissolves.

    Pour the mixture into a pan or pot and bring to a boil, until the mixture thickens, then turn off the heat.

How to Prepare Japanese-style Fried Pork – Tonkatsu

  • Prepare the Ingredients

    First, wash the pork with a little diluted saltwater, using your hands to gently squeeze the meat to clean it better. Then place the meat in a colander to let it drain.

    Use paper towels to dry the piece of meat, then use a knife to trim off any excess fat and remove all the sinews on the outside.

    Place the meat on a clean cutting board and use a meat mallet to pound both sides of the meat to tenderize it. Then transfer the meat to a large plate and season it with a little pepper and salt. Use your hands to rub the seasoning evenly over the surface of the meat to ensure it is well absorbed.

  • Fry the meat

    First, crack 2 eggs into a bowl and beat them until well mixed.

    Take each piece of marinated meat, roll it in the flour bowl, then dip the meat into the beaten eggs to ensure it is evenly coated. After that, roll the meat in the breadcrumbs. Continue to dip the meat into the egg bowl once more, and then roll it in the breadcrumbs again.

    Pour oil into the pan and heat it until hot, then add the coated meat to fry. Continue frying until the meat is golden brown on both sides, then remove and place it on a plate that has paper towels or napkins ready to absorb the oil.

  • Making Tonkatsu sauce

    You put 40 gr of worcestershire sauce, 20 gr of oyster sauce, 30 gr of ketchup into a bowl, add sugar and minced ginger. Then use a spoon to stir well until the mixture dissolves.

    You should make the sauce 20 – 25 minutes in advance for it to dissolve evenly and taste better.

    If you can’t find worcestershire sauce, you can refer to the following recipe

    • 2 tablespoons of brown sugar
    • 1/4 teaspoon of ground ginger
    • 1/4 teaspoon of mustard powder
    • 1/4 teaspoon of onion powder
    • 1/4 teaspoon of garlic powder
    • 1/8 teaspoon of cinnamon powder
    • 1/8 teaspoon of black pepper

    How to make worcestershire sauce

    • You just need to put all the ingredients into a small pot and bring it to a boil on the stove. While boiling, stir continuously. Boil for about 1 – 2 minutes until the mixture boils and thickens, then turn off the heat.
    • You can store the sauce mixture in the refrigerator and use it gradually.

  • Prepare the Ingredients

    Wash the pork thoroughly with diluted salt water, then place it in a basket to drain.

    Once the pork is drained, put it on a cutting board and finely chop the meat. To prevent the meat from sticking to the board, do not chop too forcefully.

    Crack 3 chicken eggs into a bowl and beat them well. Then add the minced meat, fried onions, and season with 1 teaspoon of fish sauce along with 1/2 teaspoon of sugar, then mix everything evenly.
