Tips for choosing good pork belly:
- Avoid choosing pieces of meat with a thick layer of fat and skin on the outside as that indicates the pig has been raised for a long time.
- Look for a dry outer membrane, light red or bright pink color. When cut, the meat should be bright pink, with white pink skin and tenderness. It should have a distinctive aroma.
- Press down with your hand and release; if the meat springs back quickly and is pink, it is fresh; if it leaves a fingerprint, it is definitely spoiled.
How to prepare Crispy Salted Pork Belly

Prepare the pork
Wash the meat thoroughly after buying it and cut it into halves or thirds as desired.
Tip for cleaning pork properly, without odor: Wash the pork with clean water several times, using a little diluted salt to wash the meat to remove impurities.

Boil the pork
Add 1 liter of water to a pot so that it covers the pork skin.
Then add 2 tablespoons of vinegar, 1/2 tablespoon of salt, and 1/2 tablespoon of baking soda so that the pork skin will puff up and not splatter oil when frying.
When the water boils, add the piece of meat, making sure to place the skin side down. Cover and boil for about 10 minutes.

Marinate the meat
After boiling, take the meat out and use the tip of a knife to score the skin of the pork in a checkerboard pattern.
Note to only score the skin, not to go down into the fat. This helps the pork skin to puff up, become airy, crispy, and tastier when fried.
Depending on your taste or the amount of meat, you will marinate to your liking. Use 1/2 tablespoon of salt for 2 pieces. Use a spoon to rub it all over the piece of meat. The skin should be more than the meat.
Then squeeze 1/2 a lemon over the skin to help the meat absorb flavor and taste better. Marinate the meat for 10 – 30 minutes.

Fry the meat
Prepare a pan with plenty of oil. When the oil starts to bubble, add 1 tablespoon of cornstarch to prevent the oil from splattering or popping when frying the meat.
When the oil is hot, add the piece of meat to fry. Fry each side until the meat is beautifully golden and appealing.
Flip the skin side down to crisp up the skin. If you see oil splattering, just add more cornstarch.
Then take it out and place it on absorbent paper. Cut into bite-sized pieces.
