How to Choose Good Chicken Eggs

  • For industrial chicken eggs, you can observe the outer shell, choose eggs that have a dark brown color, are evenly colored, and are not cracked or have dark spots.
  • Use your hand to feel the shell; if the shell feels rough and coarse, the eggs are fresh. Conversely, if the shell is smooth and shiny, the eggs are old.
  • Hold the egg close to your ear and shake it gently; if you hear or feel movement inside, the egg is spoiled, has been stored for too long, or is an egg that a hen is currently incubating. If there is no sound, the egg is fresh.

How to choose fresh and delicious carrots

  • Choose carrots that are long and tapered at the end, with smooth skin, firm to the touch, and slightly hard when pressed.
  • Select those with a deep orange color, fresh green tops, and tightly attached to the body.
  • Avoid old carrots that are bruised, cracked, slimy,… with wilted tops and damaged connections to the body.
  • You should also avoid choosing overly large carrots as these are older, which will be fibrous and lacking in nutrients.

How to make Steamed Tofu with Egg

  • Mash the tofu

    Place the soft tofu on the strainer and use a spoon to mash it, filtering out the smooth tofu to put into the bowl.

    Tip: You can use regular tofu. However, soft tofu will make the dish smoother and richer after steaming.

  • Cut the carrot

    Use a knife to slice the carrot into thin pieces about 0.5cm thick, then proceed to cut the carrot into small cubes.

    Tip: You can add various other vegetables to make the dish more nutritious and appealing.

  • Sift the eggs

    Separate the egg yolk and put it in a bowl, then use a whisk to mix the eggs well.

    Mix the chicken broth, eggs, carrots, and tofu together until well combined.

    Then pour the mixture into a ceramic bowl, cover with plastic wrap. After that, steam in a pot for 20 minutes.

    Tip: Use plastic wrap to cover the mouth of the bowl to prevent the surface of the steamed tofu from being pockmarked when steam condenses during the steaming process.

How to Make Steamed Tofu with Quail Eggs

  • Prepare the tofu

    Cut the soft tofu into round slices about 1 – 1.5cm thick.

    Then, carefully use a teaspoon to scoop out a round indentation in the center of each tofu slice, leaving the bottom intact.

  • Put the eggs in

    You crack quail eggs into the center of each tofu slice that has been hollowed out. Each tofu slice gets one egg.

  • Steam the tofu

    Place the tofu on a plate or tray, then set it on the steamer. When the water in the pot is boiling, place the steamer in the pot, cover it, and steam for 20 minutes.

    Tip: If you don’t like steaming, you can fry the tofu using a non-stick pan to fry the bottom side of the tofu for about 10 minutes with oil over low heat!

    While waiting for the tofu and eggs to steam, you can prepare the sauce.

    In a bowl, combine 1 teaspoon of cornstarch, 50ml of water, and 3 teaspoons of oyster sauce, and mix well.

    Heat a pan on the stove with 1 tablespoon of cooking oil until hot, then add the cornstarch mixture and cook for about 10 minutes over medium heat until the mixture thickens, then turn off the heat.

  • Final Product

    Transfer the steamed tofu with egg to a plate, drizzle the sauce on top, and garnish with a little cilantro and finely chopped chili to enhance the flavor of the dish.

How to choose fresh and delicious shrimp

  • Choose shrimp with a transparent shell, a slight sea smell, and no fishy odor. Avoid shrimp that are dark in color, have uneven colors, or have both dark and light spots.
  • Choose shrimp with tails that are evenly folded together. If the shrimp’s tail is spread out, it has been injected with chemicals.
  • Do not choose shrimp that have a curved body, are slimy, have a bad smell, have a rough shell, or where the head and antennae are not firmly attached to the body.

How to make Steamed Tofu with Eggs and Shrimp

  • Prepare tofu and shrimp

    Wash the shrimp thoroughly, then peel off the shell, make a cut along the back of the shrimp and remove the vein. Then marinate the shrimp with a little salt, seasoning, and pepper for 15 minutes.

    Cut the tofu into round slices about 1cm thick and place them in a bowl.

    Quick way to prepare shrimp and remove the vein

    • Count backwards from the shrimp tail to the second groove connecting two shell segments, insert a toothpick through this spot and gently pull the black vein to remove it.
    • You can also use a toothpick to poke out the head of the shrimp body to see the black vein without needing to cut the back. Gently pull this black thread out and the shrimp is clean.

  • Sift eggs

    Crack 4 eggs into a bowl along with a little salt and 150ml of water, then use a whisk to beat the egg mixture until smooth.

    Then use a sieve to strain the eggs over the bowl of sliced tofu.

    Pour the tofu and egg mixture into a pot or tray for steaming for about 5 – 7 minutes over medium heat.

    Tip: Use a spoon to remove any foam that rises to the surface before steaming to ensure the eggs are smooth, not pockmarked, and more visually appealing.

    Arrange the steamed shrimp evenly on the surface of the eggs and tofu that were just steamed. Then cover and steam for an additional 10 minutes over medium heat to finish.

    You drizzle a teaspoon of sesame oil and a teaspoon of soy sauce over the steamed tofu with eggs and shrimp, along with finely chopped green onions to enhance the flavor of the dish. You can add sliced chili if you want it spicy.

    Enjoy the dish with the fragrant richness of eggs and tofu, the sweet chewiness of shrimp served with white rice, it’s incredibly delicious.

Successful Implementation Tips

  • You can use either regular white tofu or soft tofu, but using soft tofu will make the dish more fragrant, rich, and smooth.
  • Soft tofu is usually very soft and easy to break, so you should place it on a flat surface and use a sharp knife to cut it carefully to avoid breaking it apart.
  • Remove all the bubbles on the surface and do not steam over high heat or for too long, as the tofu and eggs will boil and become pitted, making the dish less smooth and rich when enjoyed.
  • The dish will taste better when served with white rice, soy sauce, or fish sauce and enjoyed while still hot.

How to Choose Good Tofu

For regular tofu

  • Good tofu will always have a creamy white color. Conversely, tofu with gypsum will usually be yellower; the more yellow, the more gypsum it contains. Therefore, you should avoid buying pieces of tofu that are yellow or have a yellow tint.
  • If you touch the tofu and find it soft and light in your hand, you should buy it. Pieces that are heavy, firm, slightly hard, and square should not be purchased, as these are usually tofu mixed with gypsum.
  • Pure tofu will have a fragrant smell, while tofu with gypsum will smell of lime or have no smell at all.

  • Choose pieces of white, soft, smooth tofu that are intact, without any dark spots, or green mold.
