  • Prepare the carp

    You gut the carp to remove all the internal organs, if the fish has eggs, take them out and wash them clean with water.

    Then you rub salt on the fish body to remove the fishy smell, then use a knife to scrape off the scales and slime, wash again with water to clean and let it drain.

    Use a knife to make several diagonal cuts on both sides of the fish to help the fish absorb the seasoning better when marinating.

  • Marinating the fish

    You put minced garlic, finely chopped chili, 1 tablespoon of chili powder, 2 teaspoons of salt, 5 teaspoons of sugar, 2 tablespoons of cooking oil, and 2 tablespoons of satay into a bowl, and mix well until the mixture is blended together.

    You light the charcoal until it burns, then place a grill over the fire and grill the fish for about 30 minutes, turning the fish regularly to ensure it cooks evenly on both sides.

How to Prepare Grilled Carp with Turmeric

  • Prepare the Carp

    When you buy carp, ask the seller to clean it. Next, rub salt on the fish to remove the fishy smell, then use a knife to scrape off any remaining scales and slime, rinse it again with water to clean, and let it drain.

    Use a knife to make two diagonal cuts on both sides of the fish so that it absorbs the seasoning better during marination.

  • Marinate the Fish

    Smash the lemongrass, cut it into small pieces, put it in a mortar, and pound it finely. Add 3 tablespoons of water and strain to get the lemongrass juice into a bowl.

    Add 2 tablespoons of fermented rice into the bowl of lemongrass juice and stir well. Then add the pounded lemongrass and turmeric to the bowl and mix well.

    Next, use a strainer to filter the liquid into a basin and season with 1/2 teaspoon of sugar, 1/2 teaspoon of salt, 1 teaspoon of monosodium glutamate, 1/2 tablespoon of fish sauce, 1/2 teaspoon of pepper, and stir well. The leftover lemongrass and turmeric after filtering will be used to stuff the fish.

    Then, place the carp in the seasoning basin, use a smashed lemongrass stalk to brush the seasoning onto the fish so that it absorbs the flavor.

    You use a bamboo stick split in half, place the fish in the middle, clamp it and tightly tie both ends of the bamboo stick to secure the fish.

  • Prepare the Carp

    After purchasing the carp, you need to gut it and remove all the internal organs. If the fish has roe, leave it in and wash it thoroughly with water.

    Then, rub salt on the fish to eliminate the fishy smell and use a knife to scrape off the scales and slime. Rinse it again with water until clean and let it drain.

    Use a knife to make diagonal cuts on both sides of the fish to help it absorb the seasoning better during marination and taste better when grilled.

    Take a piece of aluminum foil measuring 40cm x 50cm, place 10g of crushed lemongrass in the center of the foil, then add the marinated carp and top it with another 10g of crushed lemongrass. How to choose fresh and delicious carp

  • Choose slightly larger fish as larger fish will have firmer flesh, fewer bones, and less fishy smell. When buying live fish, choose those that swim quickly, are healthy, and are not belly-up.
  • You can stroke a line on the fish’s belly; if you feel eggs, it is a female carp. Conversely, if there are no eggs, it is a male carp, and when gently squeezing the belly of the male carp, a white fluid will ooze out. Female carp are usually slimmer and have less meat compared to male carp.
  • Check the color inside the gills; if red, it indicates fresh fish, while white or dark indicates that the fish is no longer fresh.
  • When selecting fish, choose those that are fresh, have smooth scales that adhere to the skin, clear and bulging eyes, and skin that is bright red and shiny.
  • The body of the fish should feel firm to the touch, the flesh should be solid and not mushy. The eyes should be bulging, and the belly should not be swollen or burst.

How to clean carp properly, without a fishy smell

  • After buying the fish, scale it, gut it, and remove the internal organs. Use lemon to gently rub the surface of the fish to remove the slime, then rinse thoroughly with water. Do not rub the lemon too long as it may cook the fish skin.
  • If you don’t have lemon, you can rub it with salt or wash the fish with cold water mixed with a little alcohol or vinegar.
  • Be sure to remove the blood along the fish’s spine to reduce the fishy taste.
  • Continue to rinse the fish with clean water once more, then place it in a colander to drain.
