In addition, preparing the chicken meat to be drier will help the meat absorb the marinade evenly, and when fried, it will be much crispier for a longer time.

When washing the meat, you can use paper towels or a cloth to quickly blot the excess water from the chicken. Alternatively, rub a little salt on the surface of the chicken, wrap it tightly, and place it in the refrigerator for 1 day; salt effectively draws moisture out of the meat.

A handy tip that not everyone knows is that you should beat chicken eggs together with fresh milk, and use it to dip the chicken meat into before rolling it evenly in crispy flour. The egg and milk layer helps the meat to be tender and delicious after frying, moist but not dry, while also keeping the coating more secure.

You can put all the flour needed to coat the chicken, like flour or crispy flour, into one zip bag, add the chicken, and shake well to create a thick layer that sticks tightly; when frying, the meat will be crispier and more appealing.

In the case of large, thick chicken pieces, you should briefly boil the chicken in boiling water for about 1 minute before marinating; however, do not boil too long, or the meat will become dry and lose all its flavor!

When frying chicken, you should choose a deep non-stick pan with high sides to save more oil while frying. Make sure the inside of the pan is dry before adding oil to start frying.
