How to Prepare Dried Squid with Tamarind Sauce

  • Grill the squid

    First, you place the grill rack on the stove and then proceed to grill the squid. Use tongs to turn the squid evenly during the grilling process until you see the squid’s body slightly curling, then you take it out onto a plate. Do the same until all the squid is done.

    Tip: Do not grill the squid for too long as it will become tough and not tasty.

    After that, wait for the squid to cool down, then put all the squid into a plastic bag. Use a pestle to smash it to make the squid softer, then you can tear it by hand or use scissors to cut it into bite-sized pieces.

  • Making Tamarind Juice

    Soak 100g of ripe tamarind with 250ml of warm or boiling water for about 10 – 15 minutes. Then use a spoon to mash the tamarind until it becomes soft. Next, prepare a strainer and place it over the mouth of a bowl, then pour the soaked tamarind mixture in to remove the seeds.

    Add 1 teaspoon of dried chili, 1 teaspoon of satay, and 50g of sugar to the tamarind juice you just strained, then use a spoon to stir well until the sugar completely dissolves.

    After that, place a pan on the stove, and add 1 tablespoon of cooking oil to the pan. When the oil is hot, add minced garlic and ginger, then sauté until fragrant over low heat.

    Next, pour the tamarind sauce mixture into the pan and add 1 teaspoon of fish sauce, then simmer over medium heat for about 10 minutes.
