How to choose good quality dried squid
- To make a delicious squid dish, you should choose small dried squid, not too big. This type of squid will be sweet and not too chewy. If you want sweeter squid, you should choose dried squid leaves or dried tube squid.
- You should choose completely dried squid, by pressing it with your hand and ensuring it does not stick, and is not damp.
- Additionally, to choose good squid, you should also select those that have a strong salty aroma, and the bright red skin color is one of the characteristics that indicate fresh squid.
- Squid that is chewy and less sweet will usually feel heavier, soft, and slightly sticky to the touch. Moreover, you should be cautious when choosing dried squid that is too dark in color, as these are often old.
How to make Fried Squid with Pepper

Grilling the squid
The squid you buy should be washed thoroughly with water because dried squid that has been exposed for a long time can easily collect dust. Next, place the squid on a grill rack and set it on the stove.
Turn on a low flame and grill the squid, making sure to turn it frequently. Do not let the squid get too close to the fire to avoid burning it.
When the squid releases a fragrant smell and turns slightly golden, turn off the stove, take the squid out, and use a pestle to pound the squid until it is tender and the flesh is a bit flaky, then tear the squid into bite-sized pieces. Discard the squid’s skin and back.
Tip:- If you have a oven, you can place the squid in the oven for 10 minutes at 180 degrees Celsius on the middle rack with the top and bottom heat setting.
- If you do not have an oven, you can grill it over charcoal. While grilling, remember to push the coals aside and grill the squid evenly on both sides. Make sure to turn the squid to prevent it from burning.

Making pepper sauce
Wash the chili, peel and wash the shallots. Peel the garlic and wash it with water. Place the ingredients in a basket to drain.
Wash the green pepper branches, then place them on a grilling rack, put the rack on the stove, and grill over low heat. While grilling, turn the peppers evenly to avoid burning them. After about 2 – 3 minutes, when the pepper becomes fragrant, turn off the heat.
Put the grilled pepper into a mortar, use a pestle to crush the pepper until it breaks into halves. There’s no need to grind the pepper into powder.
In a bowl, add 1 teaspoon of ground black pepper, 1 teaspoon of sugar, 1/3 teaspoon of monosodium glutamate, and 3 teaspoons of fish sauce. Stir well until the pepper sauce thickens, the sugar dissolves, and everything blends together.
After preparing the shallots, garlic, and chili, put them in a mortar and grind them finely. This mixture of shallots and garlic will be used to sauté with the squid.

Fried squid
Place a pan on the stove, add a little cooking oil to the pan. When the oil is hot, add the torn squid to the pan. Stir the squid evenly over low heat for about 5 minutes.
When the cooking oil has soaked into the squid and the squid is beautifully golden, transfer the squid to a plate.

Fried squid with pepper sauce
Add a little cooking oil to the pan, when the oil is hot, add the minced garlic and onion and sauté until fragrant and golden. When the garlic and onion are golden and aromatic, add the roasted green pepper and stir for 2 minutes to release the aroma.
Next, add the pre-fried squid to the pan, stir evenly over medium heat for 5 minutes to coat the squid with the green pepper flavor. Then add the black pepper sauce to the pan, stir evenly over medium-low heat for about 5 minutes to let the sauce soak into the squid.
When the squid is dry and the sauce sticks to it, turn off the stove and transfer the squid to a plate. That’s it; you can enjoy it right away.
