Ingredients for Hue Beef Noodle Soup For 4 people

Pork knuckle 1 kg Beef brisket 500 gr Thick noodles 200 gr Beef or pork blood 1 bowl (optional) Crab or beef cake 200 gr (optional) Annatto oil 3 tablespoons Lemongrass 7 stalks Onion 2 bulbs Garlic 1 bulb Ginger 1 bulb Fermented shrimp paste 2 tablespoons Green onions a little Bean sprouts a little Cilantro/basil a little Banana flower a little Lemon 1 fruit

How to Choose Fresh and Delicious Beef

  • To choose good beef, you should observe the color of the meat. Fresh and delicious meat usually has a bright red color, not dark red, and the fat should be light yellow.
  • You should choose small and tender pieces of meat, with fine grain, and when pressed, it should have good elasticity.
  • Do not buy pieces of meat that have small white nodules that are easy to fall off as they may be parasites. You should also limit buying small pieces of meat that have already been cut, as they often contain parasites.

How to Prepare Hue Beef Noodle Soup

  • Prepare Pork Hock and Beef Brisket

    If you prefer a lot of meat, choose the hind leg; if you prefer skin and chewy tendons, choose the front leg, cut into round slices, and wash well.

    Boil the pork hock in boiling water to remove impurities, then rinse with clean water.

    Wash the beef brisket, boil separately with half a sliced ginger for fragrance. Simmer on low heat for about 2 hours, use chopsticks to pierce the brisket; if it goes through easily, it is done. Wait for the brisket to cool and slice thinly.

  • Prepare other ingredients

    Beef or pork blood can be bought ready-made or you can buy blood to boil and slice into bite-sized pieces. (Note to buy blood from reputable places to ensure food safety). If you do not eat blood, you can skip this step.

    Crab paste is shaped into small round balls and dropped into the pot of boiling brisket; when they float, they’re cooked, and you can remove them to set aside. Crab paste can be replaced with beef paste, spring rolls, or you can omit it altogether.

    With 4 stalks of lemongrass, finely chopped, the remaining stalks cut into sections and crushed. The onion is divided into 2 parts, one half cut in half, the other half sliced thinly.

    Green onions, cilantro, and basil are washed and chopped finely. The accompanying vegetables are washed and drained.

  • Cooking Hue Beef Noodle Soup

    Dissolve 2 tablespoons of shrimp paste in 100 ml of cold water.

    Fry 4 stalks of minced lemongrass until fragrant with 2 tablespoons of cooking oil, remove some lemongrass, and add 3 tablespoons of annatto oil. Mince 1 onion, 1 garlic clove, and 2 chili peppers, then add them to the pan and fry until golden, then turn off the heat.

    The pork trotters that have been prepared should be placed on the stove and simmered on low heat with 1 halved onion and 3 smashed stalks of lemongrass for the broth to be fragrant and sweet, extracting all the essence from the bones. (Note to occasionally skim the foam from the broth pot to keep the broth clear).

    Take the upper part of the shrimp paste water and add it to the pot, discarding the residue. Add 2 tablespoons of sugar, 2 tablespoons of seasoning, and 1 tablespoon of salt, adjusting the seasoning to taste.

    Add the bowl of chili oil prepared earlier.

  • Completion

    You blanch the noodles in boiling water, drain and transfer to a bowl.

    Add beef brisket, trotters, crab cake, blood pudding, cilantro, finely chopped green onions, and a little thinly sliced onion, then pour the broth over.

    The sweet and fragrant broth, the richness of the trotters, the crispy and tender beef brisket, the aromatic crab cake combined with a bit of spiciness from chili and the sourness of lime. Just thinking about it makes you crave a bowl of Bún bò Huế.
