Ingredients for 3-color Wonton Wrappers Serves 3
Wheat flour 300 gr Chicken eggs 3 eggs Beetroot juice 10 bulbs Pandan leaf water 10 ml Salt 1 tablespoon Water 1 tablespoon
Tip:
- The intensity of the flour color depends on the amount of juice you add. You can measure less or more than 10ml according to personal preference. But remember, the maximum is about 18 – 20ml of juice. If you use too much, it will make the dough soft and lack elasticity.

Mixing the Dough
Sift 200gr of wheat flour into a large bowl, add 1 teaspoon of salt and mix well.
Create a well in the center. Pour in the eggs, use a pestle or spoon to mix evenly from the inside out.
Tip: If the dough seems dry, add a little water gradually. -
Kneading the dough
Knead the mixed dough in the bowl evenly, when the dough forms a ball, take it out to the cutting board and continue kneading until the dough and eggs are well combined.
After the dough forms a mass, divide it into 3 equal parts.
Tip:
- The wet dough can easily stick when you start kneading. Therefore, sprinkle a little flour on the cutting board and rub it on your hands to make it easier to knead.
- When kneading, you need to knead firmly; the longer you knead, the smoother, more elastic, and tastier the dough will be.
- Before dividing the dough into 3 parts, roll it slightly with your hands to form a long shape for easier division.

Coloring and resting the dough
Add 10ml of beetroot juice to the first ball of dough. Next, add 10ml of pandan leaf juice to the second ball of dough.
Knead each piece of dough until smooth and place them in a bowl covered tightly to rest for 30 minutes.
Tip:
- Flatten the dough before adding the beetroot juice and pandan leaf juice to make it easier to knead and achieve an even color faster.
- Besides the two types of juices, beetroot and pandan, we can replace or add various colors from natural vegetables and fruits available by pureeing them or extracting their juices. Additionally, food coloring powder can also be used.

Cutting the wonton wrappers
Take each piece of dough out onto the cutting board after proofing, sprinkle a little flour to prevent sticking, and proceed to roll the dough very thin.
Then cut the dough into square wonton wrappers with sides of about 8 cm.

How to store three-color wontons
- Wonton wrapper dough that is left out for too long will easily dry out and spoil, so if not used immediately, it should be placed in the refrigerator or freezer for no more than 1 month (before placing it in the fridge, let it sit for 4 – 6 hours to soften the dough or leave it at room temperature for about 2 hours).
- Wontons taken from the refrigerator will easily tear and dry when wrapping. Therefore, it is recommended that you only make enough and not make too many.
