Dumpling wrappers 300 gr Tofu 100 gr Vegetarian sausage 50 gr Shiitake mushrooms 50 gr Green beans 50 gr Sweet corn 100 gr Chives 10 gr Kumquat 10 gr Soy sauce 20 ml Pumpkin 150 gr Carrot 150 gr Rice flour 10 gr Salt 10 gr Sugar 10 gr Vegetarian seasoning 10 gr Cooking oil 20 ml Green onion 10 gr

How to choose good shiitake mushrooms

  • When choosing fresh shiitake mushrooms, look for those with medium-sized caps that are tightly closed and have a slightly yellow-brown color. If you see mushrooms that are dark brown, do not buy them, as they may be poisonous.
  • For dried mushrooms, choose ones that are firm, unbroken, light in color, and free of white mold. Choose reputable sources to purchase dried mushrooms to ensure safety.

How to Make Vegetarian Dumplings

  • Prepare the Ingredients

    Soak the shiitake mushrooms until they bloom, avoiding making them too soft. Peel the corn, remove the corn silk, wash it clean, and cut it into pieces. Peel the carrots and zucchini, and cut them into pieces.

    Wash the scallions and cilantro, cut off the roots, and chop them finely. Mix the rice flour with 1 tablespoon of water to dissolve the flour evenly. Cut the tangerine in half and squeeze out the juice.

  • Make the Dumpling Filling

    Chop the vegetarian pork, shiitake mushrooms, tofu, and green beans into small pieces.

    Heat oil in a pan, add the scallions, and sauté until fragrant. Add all the ingredients and stir well with 10g of vegetarian seasoning and 10g of sugar until the ingredients are cooked and soft. Finally, add the cilantro to make the filling more aromatic.

    Once the filling has cooled, use your hands to mash it until the ingredients are well combined and stick together.

    Tip: To make the filling stick together, you can put the ingredients in a machine and blend for 30 seconds to 1 minute

  • Wrapping and boiling dumplings

    You spread the rice flour on the edges of the dumpling skin, then place 1 teaspoon of filling in the center, fold it over and press tightly so that the dumpling does not burst when boiled.

    Wrap the dumplings into a triangular shape, or any shape you like, so that the finished product is not only delicious but also visually appealing!

    You boil water, add the tangerine juice, 10ml of cooking oil, then add the dumplings and cook for 1 minute. Prepare a bowl of cold ice water; when the dumplings are cooked, placing them in the water will help make them chewier and tastier.

    Tip: Dumplings boiled for too long will become mushy and not taste good anymore.

  • Making the broth

    You add corn and gourd into a pot of boiling water and cook the vegetables for 1 hour; simmering the vegetables for a long time will help the broth become sweeter!

    After 1 hour, you take the gourd out, add carrots, and cook for another 20 minutes until the carrots are soft.

    Season the broth with 10g of sugar, 10g of vegetarian seasoning, 10g of salt, and adjust according to your family’s taste. Finally, add green onions to complete.

    Place the wontons in a bowl, arrange the carrots and corn around for visual appeal, pour the broth over, sprinkle some cilantro on top, and enjoy.

    The wontons are chewy and delicious, the filling is rich, and the broth is flavorful. Eating them with soy sauce and sliced chili is just perfect.

  • Prepare the ingredients

    Wash the carrots and chives, then cut the carrots into bite-sized pieces (you can cut them into flower shapes for decoration). For the chives, cut them in half, separating the roots and the tops.

    Divide the straw mushrooms into two parts, 100 grams cut in half for the broth, and 200 grams finely chopped for the filling.

    Wash the white tofu and fried tofu skin, then blend them together until smooth.

  • Make the wonton filling

    In a bowl, add 1 piece of white tofu and 1 piece of blended fried tofu skin, then add 200 grams of finely chopped straw mushrooms and mix well.

    Next, season with 1 teaspoon of vegetarian seasoning, 2 teaspoons of sugar, 1 tablespoon of soy sauce, 1 teaspoon of vegetarian oyster sauce, and 2 tablespoons of tapioca flour (to bind the filling) and continue mixing the mixture well.

  • Cooking the broth

    You prepare a pot with about 500 ml of water, then add 100 gr of straw mushrooms, 100 gr of carrots, and 100 gr of chopped chives, and cook over medium heat for about 10 minutes.
