How to choose good shiitake mushrooms
- When choosing fresh shiitake mushrooms, look for those with medium-sized caps that are tightly closed and have a slightly yellow-brown color. If you see mushrooms that are dark brown, do not buy them, as they may be poisonous.
- For dried mushrooms, choose ones that are firm, unbroken, light in color, and free of white mold. Choose reputable sources to purchase dried mushrooms to ensure safety.
How to Make Vegetarian Dumplings

Prepare the Ingredients
Soak the shiitake mushrooms until they bloom, avoiding making them too soft. Peel the corn, remove the corn silk, wash it clean, and cut it into pieces. Peel the carrots and zucchini, and cut them into pieces.
Wash the scallions and cilantro, cut off the roots, and chop them finely. Mix the rice flour with 1 tablespoon of water to dissolve the flour evenly. Cut the tangerine in half and squeeze out the juice.

Make the Dumpling Filling
Chop the vegetarian pork, shiitake mushrooms, tofu, and green beans into small pieces.
Heat oil in a pan, add the scallions, and sauté until fragrant. Add all the ingredients and stir well with 10g of vegetarian seasoning and 10g of sugar until the ingredients are cooked and soft. Finally, add the cilantro to make the filling more aromatic.
Once the filling has cooled, use your hands to mash it until the ingredients are well combined and stick together.

Wrapping and boiling dumplings

Making the broth
