How to choose fresh salmon
- For filleted salmon, you should buy fish that has a bright orange color, with evenly distributed fat marbling, bright and smooth, without any signs of browning or unpleasant odor. Fresh salmon should not be mushy and should have a certain firmness.
- You should avoid pieces of fish that are mushy, pale, or have cloudy fat marbling, as these indicate the fish has been stored too long and is not fresh.

Prepare the vegetables
For the spring onions, chop the roots finely and slice the leaves thinly.
Buy straw mushrooms, cut them in half, soak in diluted salt water for about 15 minutes, then rinse with clean water, and cut in half again.
Chop the green onions. Wash the tomatoes and cut them into wedges. Slice the onion thinly.

Marinate the salmon
Wash the salmon with diluted salt water, then rinse with clean water and pat dry.
How to clean salmon without fishy smell
- Using white wine: Wash the salmon thoroughly, mash some ginger or blend it with a little white wine, then rub the salmon with this mixture and let it marinate for about 5 – 10 minutes, then rinse with water. Finally, pat the salmon dry.
- Using lemon: Squeeze fresh lemon to extract juice, mix the freshly squeezed lemon juice with clean water and add a little salt. Soak the salmon in this mixture, flip it over, and then rinse with water.
- Using fresh milk: Pour fresh milk into a large bowl, add the salmon, ensuring the milk covers the fish. Soak for about 3 – 5 minutes, then rinse thoroughly; the fish will no longer have a fishy smell.
After cleaning, proceed to cut the salmon into bite-sized pieces, marinate with 1/2 teaspoon of salt, 1/2 teaspoon of ground pepper, 1/4 teaspoon of monosodium glutamate, 1 tablespoon of passion fruit juice, and 1 tablespoon of chopped spring onions. Mix well and marinate the fish for about 30 minutes to allow the fish to absorb the seasoning, then arrange the fish on a plate and sprinkle onion on top.

Cook the hotpot broth
Place a pot on the stove, add the shallots and sauté until fragrant. Add the tomatoes and stir-fry until soft, then add 1.5 liters of water to the pot and bring it to a boil.
When the water starts to boil, add the straw mushrooms to the pot and cook until done.
Season the broth with 2 teaspoons of salt, 1 teaspoon of monosodium glutamate, and 2 tablespoons of rock sugar, stirring well.
