How to choose fresh and delicious chicken feet
- You should choose chicken feet that have a natural pinkish-white color, firm skin, good elasticity, and feel neither slimy nor wet to the touch.
- Typically, fresh chicken feet will have 4 toes curled inward, and when pressed, the feet will expand.
- Avoid buying chicken feet that are plump, swollen, and have unwrinkled skin, as these may be feet that have been water-injected.
- Additionally, you should not choose chicken feet with unusual colors and those that show red spots, along with any blue-purple or yellow streaks!
How to prepare Chicken Feet with Beer
-
Preliminary processing of chicken feet
Wash the chicken feet thoroughly, use scissors to cut off the chicken nails. To eliminate odors, wash the chicken feet with a little white wine, then rinse them with water, and use a knife to cut the chicken feet in half.
Peel the ginger, wash it, and then slice it.
Peel the garlic and onion, wash them with water until clean, and chop finely.
Wash the chili pepper and slice it.
-
Boil chicken feet
Put the prepared chicken feet into the pot, then add 800ml of water along with 3 bay leaves, 1 cinnamon stick, 1 smashed lemongrass stalk cut into pieces, ginger, a little peppercorns, and 1/2 tablespoon of salt.
Place the pot on the stove and boil over medium heat. When the water starts to boil, reduce the heat and simmer for about 3 minutes, turn off the heat, and remove the chicken feet to drain.
-
Braised chicken feet
Heat a pan on the stove, add 2/3 tablespoon of sugar, and 1 tablespoon of cooking oil, and caramelize the sugar over low heat until it turns a brown color.
Next, add minced garlic and onion, sauté until fragrant over medium heat for about 30 seconds, then add the boiled chicken feet.
Season with 1/2 tablespoon of monosodium glutamate, 1 teaspoon of seasoning powder, 2/3 tablespoon of soy sauce, and 2/3 tablespoon of oyster sauce in the pan, stir well over high heat for about 1 minute, then add 330ml of beer.
Cover the pot, reduce the heat, and braise the chicken feet for about 20 minutes until the beer reduces by half, then add sliced chili and 1/2 tablespoon of ground pepper.
Continue to braise for another 10 minutes until the sauce thickens a bit, adjust the seasoning to taste, and then turn off the heat.
