How to choose good chicken breast:
- To prepare a delicious dish, you should choose chicken breast pieces with white skin, as these are from larger chickens that are tastier and more fibrous, while young chickens often have a softer texture.
- If you buy skinless chicken breast, check the layer of fat on the chicken. You should choose fat that is white, as it will be tastier.
- Choose pieces of breast with fewer striations in the meat. The more striations there are, the less fat and protein there will be, and these lines will make it harder for the chicken to absorb spices and sauces during cooking.
How to make crispy chicken with fresh lemon sauce

Prepare the ingredients
Clean the chicken breast and rinse it briefly with water. Then, rub the chicken with some salt mixed with crushed ginger and rinse it clean with water, then drain. After that, cut into bite-sized pieces.

Marinate the chicken
Put the chicken breast into a large mixing bowl and gradually add the ingredients including: 1 tablespoon of sesame oil, 1 teaspoon of pepper, 1 egg, mix the ingredients well then add 2 tablespoons of crispy flour, stir well then let marinate for 15 minutes.

Breading and frying chicken
You pour the breadcrumbs into a bowl, place a pan on the stove, add 2 bowls of cooking oil, and turn on the heat to medium, waiting for the oil to heat up. Test the oil by dipping the end of a chopstick into it; if it bubbles, the oil is ready.
You then coat each piece of chicken breast with breadcrumbs and fry until both sides are golden over medium heat, then remove and let them drain.

Making lemon sauce
You add 2 teaspoons of tapioca starch to a bowl, add 2 tablespoons of water, and stir well to dissolve.
You place a pan on the stove over medium heat to warm it up. Once the pan is hot, add 30 grams of butter to melt, then add 1 tablespoon of minced garlic and sauté until fragrant.
When the garlic is fragrant, add 2 tablespoons of sugar, 2 tablespoons of honey, 2 tablespoons of lemon juice, and the tapioca starch mixture. Stir well until the sauce thickens, then add 4 slices of lemon and the fried chicken, mixing well before turning off the heat.
