How to choose good chicken:
- Good chicken will have a compact, firm body and a small breast.

- If the chicken skin is tough, uniformly shiny yellow but the fat is white, it indicates that the chicken has been injected with drugs.
- The chicken meat should not have a spoiled or unpleasant smell.
- Press the meat with your hand to check; if the meat is firm and elastic, it’s good chicken. If the meat is mushy, slippery, deformed, or dented, do not buy it to avoid health risks.
How to Make Lollipop Fried Chicken

Prepare the chicken
First, peel the ginger, slice it, and then smash it.
Next, add the smashed ginger, 1 tablespoon of salt, and 500g of chicken wings into a large bowl, then mix well by hand, rubbing it on the chicken skin for 5 minutes, then rinse with cold water and let it drain.

Bone removal from chicken
Cut the chicken wings into 3 parts, only using the two upper parts of the wing, setting aside the end part of the chicken wing.
Use a knife to cut the tendons around the bone and then use your hands to push the meat and chicken skin towards the end of the bone. For the middle part of the chicken wing, there will be 2 bones, so remember to remove the smaller bone!

Marinating Chicken
Peel the red onion and garlic, then mince them finely. After that, place them in a mesh bag and squeeze to extract the juice.
Add the prepared chicken to a bowl, along with the onion-garlic juice, 1/2 teaspoon of salt, 1/2 teaspoon of seasoning, 1/2 teaspoon of sugar, and a little ground pepper.

After marinating the chicken, add 1 egg, 80g of dry frying flour, a little shrimp paste color, and mix well.
