How to choose delicious fried tofu

  • It is recommended to choose pieces of tofu that are golden yellow, fresh, and feel light when held.
  • The piece of tofu should have a smooth texture, moderate elasticity, and a fragrant, rich aroma characteristic of soybeans, without any smell of gypsum.
  • Avoid choosing pieces that are too crumbly, too mushy, or overly fragrant as this may be the smell of additives.

How to prepare Braised Tofu with Vegetarian Soy Sauce

  • Lightly fry the tofu

    Place a pan on the stove, add 4 tablespoons of cooking oil into the pan, wait until the oil is hot, then add the pre-fried tofu to fry again for 3 – 4 minutes, regularly turning the tofu to ensure it is golden on both sides.

    This step will help the tofu become crispier and more fragrant, preventing it from becoming mushy when braised.

  • Prepare other ingredients

    Shallots and garlic should be washed, peeled, and minced. For green onions and chili, wash them and then chop them into small pieces.

    Cut each piece of tofu into 4 bite-sized portions. Then, place the tofu into a bowl or clean plate with 1/2 teaspoon of salt, 1/2 teaspoon of seasoning powder, 1/2 teaspoon of seasoning granules, 1 teaspoon of sugar, 1 tablespoon of caramel sauce, and 1 tablespoon of vegetarian fish sauce.

  • Make the fermented soy sauce

    Place a pan on the stove, add 2 tablespoons of cooking oil into the pan, and sauté chopped shallots, garlic, and lemongrass until fragrant.

    Add 450g of fermented soybeans into the pan, stir continuously for 2 – 3 minutes until the soybeans are hot, then pour in about half a cup of water and mix well so that the mixture combines.

    Next, add 1/2 teaspoon of monosodium glutamate and 1 teaspoon of sugar into the pan to adjust the sweetness of the sauce, continue cooking for 3 – 4 minutes until the mixture boils, then remove from heat.
